Chocolate Chip Pistachio Cookies

Sometimes the best way to say “I’m sorry” is with cookies. These Chocolate Chip Pistachio Cookies were my heartfelt peace offering to my neighbors after my dog Todd had what I can only describe as a full-on main character meltdown on our block. We were simply passing each other on the sidewalk when their tiny (but very vocal) pup started yipping at Todd. Before I could react, Todd yanked the leash from my hands and went full beast mode toward their dog.

It was the most terrifying minute of my life!  Thankfully, no one was hurt, and I made sure to cover their vet visit just in case. While I can’t undo the chaos of that moment, I hoped a batch of warm, homemade cookies might soften the situation — and remind all of us that a little kindness (and a lot of chocolate) goes a long way.

Ingredients

  • flour
  • graham cracker crumbs 
  • baking soda
  • salt
  • sugar
  • brown sugar
  • cinnamon sugar (I use this brand)
  • vanilla extract
  • avocado oil
  • butter
  • chocolate chips
  • pistachios

How to get uniform cookies

Use a Cookie Scoop.  I use a #60 cookie scoop, which is about a tablespoon of batter.  The cookies spread while baking.  This ensures that each dough ball is the same size, which helps them bake evenly and look consistent.

Chill Your Dough.  After mixing the dough, chill the dough for at least 30 minutes.  I got busy and mine chilled for 60 minutes.  Be sure to place the batter back in the refrigerator between baking.  

Weigh Your Dough.  If you are looking for very precise, use a digital kitchen scale to weigh each dough (i.e, 30 grams each) and they will bake at the same rate and all look identical.

Chocolate Chip Pistachio Cookies

These decadent chocolate chip pistachio cookies are so delicious! Crunchy on the outside, yet tender and chewy on the inside. The best of both worlds!

Ingredients

  • 2¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup graham cracker crumbs
  • ¾ cup sugar
  • ½ cup brown sugar
  • 2 tbsp cinnamon sugar
  • 2 tsp vanilla extract
  • ⅓ cup avocado oil
  • 1 stick (½ cup) butter, melted and slightly cooled
  • 1 cup chocolate chips
  • 1 cup pistachios, roughly chopped

Instructions

Preheat oven to 375°F. Line baking sheets with parchment paper or silicone mats.

In a large bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs. Set aside.

In another bowl, mix the sugar, brown sugar, and cinnamon sugar. Add in the avocado oil, melted butter, and vanilla extract. Stir until smooth and fully combined.

Gradually add the dry ingredients into the wet mixture, stirring until a soft dough forms.

Fold in the chocolate chips and pistachios until evenly distributed. Chill for 30-60 minutes before baking, ensuring to place the batter back in the fridge between baking.

Scoop dough into 1-tablespoon balls and place 2 inches apart on the prepared baking sheet.

Bake for 9–11 minutes, or until the edges are golden brown and the centers are just set.

Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Each cookie is 5 WW points. If you count calories, each cookie is 159 calories.
