Carrot Biscuits

  • unsweetened almond milk (or milk of choice)
  • vinegar
  • carrots
  • walnuts (or nut of choice)
  • powdered sugar
  • lemon juice

What’s The Difference Between a Biscuit and a Scone?

Biscuits and scones may look alike at first glance, but they’re actually quite different once you dig in. Biscuits, especially the kind we know and love in the U.S., are all about lightness and flakiness. They tend to be buttery, barely sweet (if at all), and often served as a savory sidekick to breakfast or dinner.

Scones, on the other hand, are more of a crumbly, slightly dense treat. They’re usually sweeter, sometimes enriched with eggs, and often studded with goodies like dried fruits or chocolate chips. If you think of biscuits as a no-fuss, comforting staple and scones as a slightly fancier, tea-time indulgence, you won’t be too far off.

Carrot Biscuits

Cook Time: 15 minutes
Total Time: 20 minutes

These carrot biscuits are as if a scone and a biscuit had a baby. Slightly sweet, incredibly addicting and the perfect side dish to any meal.

Ingredients

  • 1½ cups all-purpose flour
  • ½ cup quick oats
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • 1 tablespoon cold butter, grated
  • ½ cup nonfat Greek yogurt
  • ⅓ cup unsweetened almond milk (or milk of choice)
  • 1 tablespoon vinegar (white or apple cider)
  • 1 cup grated carrots
  • ¼ cup walnuts, chopped
  • Lemon Glaze:
  • 2 tablespoons powdered sugar
  • 1 teaspoon fresh lemon juice

Instructions

Preheat oven to 400°F (205°C). Lightly spray a baking sheet with avocado oil spray or line with parchment.

In a large bowl, mix together the flour, oats, baking powder, salt, and sugar.

Add the grated butter into the dry ingredients and stir to coat. It’s okay if there are small butter pieces—that adds flakiness!

In a separate bowl, combine the Greek yogurt, almond milk, and vinegar, then stir in the grated carrots and chopped walnuts.

Mix wet into dry just until combined. Don’t overmix—lumpy batter = tender scones.

Using a 1/3 cup scoop, drop 10 mounds of dough onto the prepared baking sheet.

Bake for 15 minutes, or until the tops are lightly golden and the centers are set.

Cool completely on a wire rack before glazing.

In a small bowl, whisk together powdered sugar and lemon juice until smooth. Drizzle lightly over each scone.
