I love when beef for dinner can morph into breakfast.  This chuck roast was so tender, and when I sliced it cold, it was easy to shave.  I’ve always dreamed of having a meat slicer – but I think Hannah would have a heart attack if I bought one more kitchen tool. šŸ˜€  Flour tortilla (3) (note to self:  need to find and buy Tumaro wraps).

Twin powers activate!  After I posted my breakfast, my twin sister texted me a picture of her breakfast – love it! Great minds think alike. šŸ˜€

I was solo on my walk at lunch – Jenn had another work lunch event, and guess who forgot their fit bit?  Does it really count if you can see how many steps you actually took?! 

I had leftover wonton filling from my wonton fest at my friends house.  It was super finely chopped broccoli, carrots, tofu and shrimp – which is all zero points, used 1 tablespoon stirfry sauce (1) sriracha (0) and 1/2 cup of leftover rice to make fried rice.  So simple and delish, but still never even close to my late husband’s fried rice – damn that was so good!  I watch the video of him making it and still can’t recreate it.

I had plans to play softball after work – the game wasn’t until 6:30 so I knew even if someone signed up, I’d be able to get the work done and still get to the game.  Nope.  THREE people signed up for work, and my boss called needing something at 6:15 and I didn’t clock out until 7:30.  Womp Womp.  The sky was pretty though when I left!

 

I haven’t been on a Seadog boat ride in many years – I think Hannah and Jacob and I need to do it this summer.

The only problem with working until 7:30 is that my train only runs on the hour, and the next train wasn’t going to be until 8:30, which gets me home at 9:45.  Or 10, if the train was running slow like mine was.  I decided to spin the food court wheel, and got Popeyes chicken strips with mashed potatoes – 16 points for that, and said “I don’t want the biscuit.”

Of course we all want the buttery biscuit, right?  But I know me.  If I took one bite, I’d eat the whole thing.  And I noticed they even gave me a packet of honey – the best!  But here’s what I do.  I lick the biscuit a couple times, then throw it out.  Temptation averted! šŸ˜€

The best part of coming home (of course, besides seeing Hannah and Jacob) is getting snuggles from Roman.  He used to hate for me to pick him up but now he doesn’t mind, and will let me hold him for hours.  Too bad he gets heavy after ten minutes.

Alright, off to knock some things off my to do list before heading to my doctor appointment.  Make it a great day!
