There are just some recipes that stop me in my tracks and I tell myself “I need to make these stat!”  That’s what I thought when I saw Chungah’s recipe for these cheddar chive bacon biscuits.

I know biscuits are a love/hate – much like cilantro.  Tony only liked them if they were smothered in sausage gravy, but I love them drizzled with a little honey or with butter and jelly.  So good!  My brother was my food stylist model – thanks Charlie!

I adapted her recipe just a few ways – I made mini biscuits because of the butter and cheese, and I used peppered bacon from Mariano’s.  Do you have Mariano’s near you?  Do you buy their bacon at the meat counter?  It’s so good!!

And if you haven’t started baking your bacon, you need to.  So much less mess, they bacon doesn’t curl up.  Lay your bacon on top of a cookie rack, on top of a jelly roll pan (to catch the fat) and bake at 400 degrees for about 10-15 minutes depending on how thick your bacon is.  Let cool, and chop in a recipe, or store it in the fridge in a ziploc for up to 5 days.

Another trick when making biscuits – use cold butter and grate the butter like you would the cheese.  That way you don’t have to touch it much – just throw the shredded cheese into the flour mixture and toss to coat.

Here is how the dough looks when it’s all mixed – a bit sticky, but you add a bit of flour to the counter and your rolling pin and it works out just fine.

I baked a dozen at a time – this recipe made 36 mini biscuits.  After I cut out the first 12 biscuits, I gathered the remaining dough together and put that back in the fridge to cool again before making my next batch.

Now the second trick to super fluffy biscuits – freeze them for 15 minutes before going into the hot oven.  The butter will be super cold – extra cold butter + hot oven = fluffy biscuits!

OMG, these are so amazing!!

These are light, flakey and delicious.  Love the extra spice of the peppered bacon and the flecks of cheese, and yes, I even used chives!  Can you even believe it?!  I ran this through the Weight Watchers recipe builder and each mini biscuit is 3 points, not 4 like I originally thought.  So worth it!

Yesterday was such a busy day at work.  I knew it could be so I was prepared.  I drank a Premier Protein at 10:30 (2 points) and ate what I brought for breakfast for lunch around 2:45 – an egg bagel open faced sammie for 8 points.  

I defrosted a pork chop for dinner, but my roommates said they ordered Rosati’s and asked if I wanted some, and I couldn’t say no.  I ate three of those squares and called dinner 14 points.  I am fighting a cold/bronchitis – haven’t figured it out yet, so I laid low last night and got in comfy clothes and watch the Voice and This Is Us – gosh I love that show!!

It’s month end so I hope that I can get away for lunch today if my cough and work allow it.  It was already 45 degrees when I left the house this morning – love.
