I am so happy to share this healthy banana muffin recipe with you guys. Only one tiny problem – I said they were three smart points, but they are actually four – I forgot to add the two eggs to the recipe on the WW app, but still, these are a winner!
But first, can I talk about how empty the train parking lot is because everyone took the week off?!
I knew I was going to be having a kind of picky plate for breakfast yesterday and picked up these two hardboiled eggs at Walgreen’s of all places – only $1.32 including tax. Word on the street is that eggs are going to be zero points on the new Weight Watchers plan, but these two egg cost 3 points.
Um, I may have not eaten breakfast until 11:30 – 2 ounces Canadian bacon (love) 1 point, the 4 point muffin, a 1 point cheese stick, the eggs with hot sauce (duh) and fruit. I could probably eat that breakfast every day and not get sick of it.
I had so much work and so little time. It was one of those days where every ten minutes someone would say “hey Beth, can you do this?” At one point I felt like I was going to cry it was just too much. But, I brushed it off like I do and just pushed through. But I do have to laugh at this Snapchat filter 😀
Since I ate breakfast so late, lunch was at around 4:45. This kind of tasted like ass. I attempted to make a veggie fried rice, but the zucchini and carrot zoodles I bought were over a week old and didn’t taste that good. Oh how I miss Tony’s fried rice!
The kadults went out to dinner, so I made this super quick quesadilla for dinner – two low carb flour tortillas (7), 2 ounces of beef (2) spinach and Pam fried to make it crisp. I chopped up a 1 point cheese stick for the cheese.
I had to share this picture below. I’ve been blog friends with Rhonda for years. She used to blog at I Dine Alone – she and her husband had very different tastes but that wasn’t going to stop her for making food that she liked for dinner. I loved all her recipes! Anywho, we are Instagram foods as well – and just so happens she has two Boston Terriers as well – and when I did a story on Instagram of me coming home to the dogs last night, her dogs heard Rummy and Roman on the phone and were trying to find the dogs – so cute!
Okay – so back to the muffins! Can we talk about this Bolthouse Farms plant milk for a second? I will be honest, that I don’t think that I would drink a glass of this, but I love it in my coffee and in baking.
I normally use plain Chobani in my muffin recipes, but only had coconut, so used that – love!
And because I was using coconut yogurt, I had a partially opened can of light coconut milk and added 1/4 cup of that to the batter, and when I finished mixing the wet ingredients, the batter looked thick like banana pudding.
I can’t wait to make a batch of these again.
What are your plans for Thanksgiving? I am going to my sisters house, so I am not cooking that much. In fact, other than bringing rolls, I won’t be cooking anything else because I am bringing a charcuterie board for the appetizer. It feels weird that I haven’t been planning all the food for the last two weeks!
Hannah is going to be grilling a turkey for Jacob. His grandma is not doing well so they are going to stick close to home. Luckily I am not leaving for my sisters until later afternoon, so I may have to be of assistance. I am hoping I can get some of the leftover turkey for the weekend though!

Like mother like daughter. I have seen you do some marvelous things with a turkey breast on the grill. You know I’m not a fan of the snap chat but that one fit the mood and made me laugh. Happy Thanksgiving to you and your family.
Happy Thanksgiving Biz – enjoy your family time! A turkey on the grill sounds like a big undertaking for Hannah – hope you get some leftovers. Are you off on Friday?
