It’s funny because I usually don’t have a sweet tooth at all – breakfast included.  But since I’ve made Martha Stewarts buttermilk pancakes, I can’t get enough of them!  I mean come on, two giant pancakes for 181 calories – I am in!

So yesterday I decided to enter the recipe again just for the batter.  I decided to ditch the 4 tablespoons of butter in the batter and use that recipe as a base.  Then I can adjust the calories for whatever I want to add to it – apples, bananas, blueberries, etc.

Here is my adjusted base recipe:

Marty’s Buttermilk Pancakes (well, Bizified)
  • makes 10 pancakes, 5 servings – each serving: 181 calories, 6.03 fat, 26 carbs, 1.2 fiber and 5.25 protein
  • 274 calories, 3.9 fat, 49 carbs, 1.8 fiber and 9.7 protein

Yep, turns out I said it was 10 servings – which is 181 calories per pancake instead of five servings of two pancakes each.  Sorry Louise!  I know you’ve already made these!

Ingredients:

  • 2 cups flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 1/2 cup eggbeaters
  • 1 cup non-fat buttermilk
  • 2 cups unsweetened almond milk (mine is 30 calories a cup)

That being said, these are still delicious and I can justify having two pancakes for breakfast now that I know how many actual pancakes they make!  Yesterday I added blueberries, bananas and two tablespoons of walnuts.  So good!  And while this plate is 475 calories, it’s so filling and gave me lots of fuel for my lunch workout.

And yes, I know I have to update my google Chrome – thanks for the reminder.  So my first thought is what the hell is “hold weights in grocery bag position?!”  I just held the weights down at my side. 

And as for the resistance – yeah, that didn’t happen – have you ever gone level 15 on a StairMaster – that’s like running up the fucking stairs – with weights!  So I ended up going low and slow since the weights were throwing me off balance.  I went between level 3 – 5 – 7 and back down.  The hardest one was holding the weights over my head – but I have to say, it felt like a good workout!

Before work I cooked up some ground sirloin to make burritos for me and my boss.  The black poo on my plate is actually smashed canned black beans that I added some chicken broth, cilantro and chipotle peppers to.  We also each had 1/4 of an avocado that I mashed and used as a spread.

Have you guys ever seen the movie Mean Girls with Lindsay Lohan?  She gets back at some of the girls who are being mean to her by giving them energy bars that are supposed to make you gain weight – her Mom used to give them to village kids in Africa where they lived to bulk up their diet – only Lindsay tells the girls they are African weight loss bars.  Needless to say, all the girls gain weight and can’t fit into their prom dresses because of them – that was her revenge.

Sadly, whenever I put food in front of my boss, she thinks I am trying to fatten her up.  Not kidding there are some days when I tell her that her lunch is 400 calories and she tells me that she will probably skip dinner then.  Gah.  I keep reminding her that she and I are eating the same thing – so pretty sure I am trying to sabotage myself!

I knew I had some chicken tenders I needed to cook up, so I decided to make chicken taco salad for dinner.  I stopped by a local grocery store on my way home.  I need to hit up this store over the weekend to spend more time there – its huge!

I just wanted to pick up some stuff for the salad and I didn’t have any cheddar cheese (I know, I kind of just panicked as I wrote that sentence!).  $2.56 later, I was all set.

I ended up making two Pam/light oil chicken tacos – each had only an ounce of chicken in them with a bit of cheese and Romaine and of course, hot sauce.  The salad?  It was eaten after I ate my tacos. Open-mouthed smile  My dressing is 1 tablespoon blue cheese dressing (all we had) and 1/4 cup of my baja fresh salsa.

This was really good – the dressing was spicy too – delish! 

Last night was Day 58 of Insanity – Max Cardio Conditioning.  I think after the Max Interval Sorts Training this is my favorite one.  The last 30 minutes are continuous but it goes from high intensity, down to low intensity and back and forth.

Only two more days until I hit Day 60, then I’ll do the final Fit Test and measurements on Saturday.  And then start it all over again! Open-mouthed smile

Tony was a trooper last night and not only watched Chopped but also Top Chef Masters.  After those were done though, he sarcastically said “I just wish there were more cooking shows!”  I still have about 10 more on the DVR (like 48 episodes of America’s Test Kitchen!).

Right as Tony and I were finishing eating dinner, Kyle showed up.  There was no food in the bowl on the deck so I filled it up.  She scared the shit out of me because she came right by the door when I went to fill it up – I spooked her so she would move back. 

Holy cow she didn’t waste any time – she didn’t stop eating until the whole bowl was gone!

I went downstairs to get laundry out of the dryer and I could hear Tony talking.  I just assumed he was on the phone.  Nope, he was talking to Kyle – who was going ape shit!  I should have taken a video but the squirrel was almost barking at us – it sounded like this squirrel.

It just wanted more food and came right up to the front door I thought it was going to walk right in – we freaked out and just shut the door.  And locked it.  Because you know squirrels have tiny hands and can open front doors. Open-mouthed smile
