Thanks for all the tips for apps for my new phone! Okay, you guys are going to laugh, but that’s okay. I love Instagram. I like being able to take a picture, use the features to fix it up to post to Facebook. A while back people started following me. A. I don’t know how people found me, and B. I had no idea why people were following me.
So yesterday a few of you gave me your Instagram names to follow you and NOW I GET IT! It’s kind of like a mini blog post in a way. Now I can keep up with Erica’s sweet baby girl, Jen’s killer workouts and healthy eats, and Rhonda’s cute pups! If you have an Instagram account, let me know what your name is and I’ll follow you!
Breakfast was an oldie, but a goodie – a McMuff! 100 calorie muffin, 1/3 cup egg whites, baby spinach, 1 slice of ham and 1/2 an ounce of cheddar cheese. On the side? That’s not an orange . . . it’s called a cocktail grapefruit! Never heard of it before, but if I were to describe it, it is 2/3 orange and 1/3 grapefruit. If you aren’t a true lover of grapefruit, this one is the one to try – so delicious!
I had no “official” workout per se, but that’s not to say I wasn’t moving most of the day. Normally my day is spent at my desk, staring at a computer, but yesterday we had a major file reorganization going on, and I must have lifted hundreds of files from one end of the office to another. Even later in the afternoon my blood sugar dropped to 48 – yikes! A quick apple and 1/2 a container of orange juice and I was good to go.
I had some broccoli I bought last week that I never used. Broccoli Cheddar Soup is one of my favorite soups at Panera. I even have a copy cat recipe for it. I have to say, I think I like this version better!
Broccoli Cheddar Soup
- makes six, 1.5 cup servings
- 216 calories, 8 fat, 21 carbs, 4.6 fiber, 12 protein and 833 sodium
Ingredients:
- 4 cups chopped broccoli
- 4 cups chicken broth
- 2 cups chopped carrots
- 2 cups unsweetened almond milk
- 1 pound of potatoes (about 3 large) peeled and chopped
- 1 teaspoon crushed red pepper
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- 1.5 cups shredded cheddar cheese
Add everything to a dutch oven, except the cheese, and cook over medium-low heat for 30 minutes, or until the veggies are tender. Using an emersion blender, blend to the soup to your liking, I left a few chunks of broccoli and potato. Remove from heat and stir in the cheese.
The potatoes really thickened the soup and my boss didn’t even notice that there was unsweetened almond milk in it. I swear, unsweetened almond milk is becoming my go to substitution for any recipe that calls for milk. And as luck would have it, I can usually find it in the 50% discount bin at my store.
I had sloppy joes on the menu for dinner. As luck would have it, I saw that Nicole recently made a crock pot version, however, I decided to see if I could make it on a weeknight on the stove top. I did adapt it, because I only used ground sirloin, and I scaled back the recipe. Nicole, I tried to leave you a comment, but your Discus kept saying my email wasn’t accepted – I tried every email, but to no avail. So THANK YOU for this recipe – tangy, not too sweet and super easy to put together on a weeknight – the sloppy joes were ready in about 20 minutes.
Sloppy Joes (adapted from Nicole at Heat Oven to 350)
- makes 5 servings, a heaping 1/3 cup measure per sammie
- 237 calories, 9 fat, 17 carbs, 1 fiber, 20 protein and 687 sodium
Ingredients:
- 1 pound lean ground beef
- 1/2 medium green pepper, chopped
- 4 ounces tomato sauce
- 1/4 cup water
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon cider vinegar
- 1 tablespoon yellow mustard
- 1/2 tablespoon chili powder
- 1/2 tablespoon Worchestershire sauce
- 1/2 teaspoon salt (could easily have left this out)
- 1/4 flour
Since lean ground sirloin doesn’t have a lot of fat, I just added everything to my skillet at once, except for the flour. I let the meat simmer for about 15 minutes, then stirred in the flour and let that simmer for 5 more minutes.
And no sloppy joe is complete without pickles! On the side I had 1 ounce of potato chips and carrots and celery dipped into ff ranch. This was a super delicious, quick and easy weeknight meal. I don’t happen to like sloppy joes on the sweeter side, but feel free to adjust it to your taste.
Okay, any technical gurus out there – I am having one problem. I can’t seem to figure out how to add my iTunes to my iPhone. I can open iTunes on my phone, but for the life of me I can’t find out where to log in to get all my songs. I downloaded the Will.I.Am and Thrift Store songs to my iTunes, but can’t figure out how to access it.
We have another winter storm advisory for today – rain, turning to sleet, turning to snow. Hope I don’t have a three hour commute home like I did a couple weeks ago! Spring – where are you??!!
Time to get this show on the road . . . make it a great day!
I have been searching for beep codes and so far I have come up with memory error.
Hi! I made this soup yesterday and it turned out great. I added onion and celery 🙁 I ended up adding in the broccoli and milk in after blending the soup and, for the cheese, I used Velveta… turned out great. I think the addition of the crushed red pepper flakes was brillant. Really adds a lot! Thanks for another great recipe.
I am okay with the addition of the onions. I realize its Tony and I Against the world when it comes to onions!!
I love reading all of your posts, they always make me laugh 🙂 What is your instagram name? I couldn’t find it 🙁 mine is msashleyrenee
I’ve never been on instagram, I’ll have to check it out!
Well, I don’t want to be left out either, Biz. @michiamocandace on Instagram. I haven’ t had sloppy joes in for-ev-ah. Those look amazing. They are going on my menu for the weekend. oh yeah.
I love me some sloppy joe!!
I love a good sloppy joe! It makes me feel like a kid again.
ps: Thank you for the Buffalo Tabasco! I got it yesterday and immediately dunked some chips in it. 🙂 You’re awesome!
I like changing lives, one bottle of Buffalo Tabasco at a time – glad it didn’t break on the way to you! 😀
Have you synced your phone to your computer?
I did last night, and I think the problems is that my iTunes is not the most recent version – I’ll try it again tonight – thanks for the heads up though!
The sloppy joes look delicious.
I have an Instagram account but I don’t use it, I actually never took the time to explore it very well. Maybe someday I will but it’s consuming enough time right now to keep up with blogs and FB. For now that’s enough for me.
There is something about your sloppy joe pic that is so tantalizing. I think it’s the angle, the focus, and the way the pickles catch the light. so pretty! Never thought I’d say that about a sloppy joe-lol!
I don’t know why it focused on the pickles, but they did make the sammie!
I found you on Instagram! Yay! And mine is morganjoyner – if you are interested 🙂 On Words with Friends I think I am just under Morgan Joyner also if you want to play a game!
Thanks Morgan!
If you are so inclined, you can follow me in Instagram – @fache79.
Thanks Marianne – found you! 😀
Oh my, that soup looks fabulous! Broccoli cheddar is one of my all time favorites!
Wow, that McMuff looks awesome. I have to remember that for a healthy breakfast!
I’d hook up with you on Instagram but I literally have NO idea what I’m doing on there…I’m so bad with all this stuff!
teresa444, i’ll look for you too! i neeeeed that soup, it looks so good!
okay I tried to find you but no luck! find me =) namstemari
Even though you spelled it wrong, I found you Mari! 😀 Hugs!
oooooo I have to find you on Instagram!!!!! Yums I still have not had Sloppy Joe since I started to eat meat again
You know what’s really odd [I mean, besides ME!] I make a version of the soup, but I don’t add milk [any kind] and it’s still really tasty. I am going to throw in the red pepper flakes. That entices me. Yum
Oh, and your friend rocks with her sloppy joe recipe. I always buy Manwich, but sometimes I forget to keep it stocked [and the sodium is obscene anyway] so it is great to have the ingredients that I always have in the house anyway. Pooldad says it won’t be the same, but what he doesn’t know…. ::wink::
Glad you are toasty posty and I do hope you are staying home tomorrow. Warm hugs and lotsa’ love, Skippy
I was going to say, Manwich is SO high in sodium for you! And I love you because you are odd! 😀
Hope you enjoyed your daughters concert tonight!
Everything looks amazing as usual! I love unsweetened vanilla almond milk – I use it for so many things and my son is a little lactose intolerant so it works well for him too!
Thanks Tami! 😀
I will have to find you on Instagram! I’m magpie707.
I’ll find you Maggie – I am mybizzykitchen!
LOVE broccoli-cheddar soup, so tasty! 🙂 And I love pickles on my sloppy joes too….definitely not complete without them!
I love instagram, I post poodle pics pretty often! Alwaysjoy
I tried unsweetened almond milk a while back, but wasn’t a fan…I just use cow’s milk in everything I cook.
I hear that storm is a bugger – my son’s trip to Kansas City was cancelled because of it!
I got out of work early today – so that’s about the only positive thing about today’s weather!
Thanks for the mention 🙂 I have been in love with Instagram since it FINALLY came out for Android phones. I will be sure to post a picture when I go see your White Sox play my Dbacks in a few weeks.
Rhonda, Tony and I came inside after snow blowing the drive way for an hour. We turned the t.v. on, saw the Dbacks playing on that sunny field and I said to Tony “that’s where Rhonda is – I want to be where she is right now!” 😀
What??? sloppy joes with no onions?;-(
Yes, our home is a happy home with no onions. Especially since my daughter moved out last year. I sheltered my daughter from onions until the tender age of 12. She went to a sleep over and they ordered a vegetarian pizza, it had onions on it, but Hannah didn’t want to be rude, so she ate a piece of pizza.
I picked her up from the sleep over – she ran to the car and said “Mom, onions are amazing!” It was then that I realized I lost her to the world that loves onions.
But Tony and I can still eat onion rings! 😀
In our house, we eat about 4 pounds of onions per month. Onions go into and on everything! (So, I think I’m not cooking in my house, but obviously I am! :D)
🙂 Marion
Don’t forget me!! (@heatha262)
I seriously die over sloppy joes. My grandpa makes the most amazing ones from scratch!
Thanks Heatha!!
I drink a lot of almond milk. I get the unsweetened vanilla usually. I have it in my morning coffee to cut calories, but I like to make oats with it for the creaminess factor.
I love that you just dump everything in a pot for that soup, let it cook, then blend up – how easy is that? And I’m probably the only person on the FACE OF THIS EARTH without a smartphone yet. I’ve been begging my husband for one, but he is CHEAP. Someday, I’ll start following you on Instagram:(
My sister doesn’t have one either – when I send her these cool emoticons, she doesn’t see anything but symbols! 🙁
Biz, I need to follow you on Instagram! My name is Samtastic27. When you go to your iTunes, click on “more” and you go to “purchased”, music–and then it should say “not on this iPhone” and you go to that you should be able to download all of your music from there 🙂
Sam!! So glad you commented just to let me know you are okay – I am a worrier, okay?! Now I can follow you though! 😀 Thanks for the tip on iTunes – I’ll try it!
I didn’t chime in yesterday, but one app I do like on my iPhone is Light Meter. Helps you use the manual setting on your DSLR in different lighting conditions. Helps me to understand the manual settings better. Also Pic Collage, lets you make collages from your camera roll.
What?? That’s genius! I will definitely check that out Jacky – thanks!
I’m on Instagram too! (@kimslittlelife) I am very inconsistent in using it, but I’d like to learn more about it.
Found you too Kim! 😀
That broccoli soup does look good, I have some extra broc in the fridge too! Stay safe in the snow storm!
Yayyyyyyyyy! Instagram rocks. And sloppy joes are so good. I haven’t made them in so long. Pickles on top? Brilliant idea
Biz, what’s your instagram? I’m on there @990Square
Found you!! Thanks B!
I <3 instagram…i am dupontchick24…post there more than my abandoned blog
Following you now Jamie! 😀
