I went to Weight Watchers this morning . . . I am up 1.6 this week. Not sure if I didn’t guestimate the points on my birthday right, but I am not going to get discouraged – I’ll just keep on doing what I am doing, and maybe not have as much wine this week! 😀
My lunch was so good yesterday, I had to share. I keep forgetting that it’s lent so my one friend could only enjoy the soup – no chicken wontons for her! (on a side note, if you use chicken broth in a dish, is that considered a “meat” during lent?).
Pumpkin Coconut Soup
- makes 4 servings: 1.5 cups for 3 PointsPlus
Ingredients:
- 1 can pumpkin
- 4 cups chicken broth
- 1/3 cup light coconut milk
- 1 teaspoon canned chipotle pepper (this is still a good amount of heat!)
- 2/3 cup potato buds (dried instant potatoes)
Combine the pumpkin, broth, coconut milk and chipotle pepper. Simmer for 10 minutes. Add the potato buds and puree with stick blender. Really, its that simple! The potato buds made it a nice thick soup and the sweetness of the pumpkin and coconut milk balance perfectly with the little bit of chipotle heat.
Thai Basil Chicken Wonton Cups
- 4 servings: 5 wonton wrappers are 2 points, 1/4 of chicken mixture is 2 points
Ingredients:
- 8 ounces chicken breasts
- 1 red pepper
- 1 yellow pepper
- 4 tablespoons fresh basil
- 1 dried Thai red chili
Put everything in a food processor. Cook in a pan for about 8-10 minutes, just until the chicken is cooked through. Put 1/4 of chicken mixture in 5 wonton cups (the wonton cups are baked in a muffin tin at 350 for about 7 minutes, just until they are crisp – be careful, they go from crisp to burnt in a minute!). So my lunch was 7 points and completely filling. 😀

omg those wonton cups look amazing girl! I’ve been seeing them at parties a lot lately (with random stuff in them!) and have got to try my hand at them! yours sound delish!
