Whenever I announce to Tony that I am going to get up to go to the gym, I think he thinks in the back of his head “I’ll believe it when I see it!”  But I like that motivation.  I’ve said it before my husband thinks I am beautiful right now at 160 pounds, just as much as he loved me when I got up to 173, and even when I met him at 137.

And the night before last when I kissed him goodnight, told him I was going to get up he said “you are beautiful and you can do anything you set your mind to.” šŸ˜€

As my friend Jenn always says that her husband has “Jenn goggles” and thinks and says she’s beautiful no matter what, I am happy that Tony has “Biz goggles!”

But at 6:00 a.m. when its still dark out, and I am under our down comforter, I have to tell you its extremely tempting to just sleep in.  But I knew that Helen was going to be kicking ass yesterday, so I had to as well!

I got out of bed and took my blood sugar reading.  Damn.  It was 62.  But what’s different about me (or maybe every diabetic?) is that I was okay with that number.  I ate 1/2 an english muffin with peanut butter for fuel.  You see, my blood sugar spikes in the morning after exercising, so I didn’t have any worry of crashing.

50 minutes after my workout, my blood sugar was 175, so I just adjusted my insulin for my breakfast when I got to work. šŸ˜€  I did 15 minutes of strength training, and for my cardio, decided to run sprints.  Our track is small, it takes 12 laps to run a mile.  I sprinted 3/4 of the track, walked 1/4 of the track, and did that for 30 minutes. šŸ˜€

When I got to work I had this hash which is a new favorite – 3 ounces of beef taco meat with 1 egg, baby spinach, red pepper and 100 calorie guacamole (seriously can eat this every day!) with 3/4 cup of blackberries on the side – breakfast comes in at 405 calories, 22 fat, 35 carbs, 10.5 fiber and 19 protein.

When I got back from the gym yesterday morning the only thing I had left to do was sear my tuna steak for a tuna steak salad – it was cooked perfectly even though I was multi-tasking a bit making coffee and putting make-up on at the same time. šŸ˜€

FYI. . . Sam’s Club sells individually frozen ahi tuna steaks – there were 8 in a package for around $13.  I just put one in the fridge from the freezer overnight – when I got back home from the gym it literally took me 4 minutes to sear the tuna. šŸ˜€

Lunch is baby spinach, carrot, 4 ounce tuna steak, fuji apple salad drizzled with this salad dressing.  Lunch comes in at 372 calories, 15 fat, 30 carbs, 5.7 fiber and 26 protein.  I was worried I wouldn’t like the chilled tuna since I cooked it and stuck it in the fridge at work.  But with the crunchy carrots and sweetness of the apples, this was an awesome combo – I will definitely make this again.

I realized that I had chili mac on the menu for dinner last night.  Only one problem, I haven’t made the chili yet.  So on to Plan B.  I had Tony pick up some smoked sausage.  What goes well with sausage?  German Potato Salad!

I love German potato salad because its not mayo based and I LOVE vinegar. šŸ˜€

German Potato Salad (adapted from here, I left out the onions and chives)

makes 8, 1/2 cup servings:  98 calories, 1.9 fat, 18 carbs, 2.8 fiber and 2.0 protein

  • 2 pounds potatoes
  • 1 tablespoon canola oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon white vinegar
  • 1/4 – 1/3 cup hot chicken broth
  • 1 tablespoon Dijon mustard
  • salt and pepper to taste
  • garnish with parsley

Wash potatoes and add to pot.  Cover with just enough water to cover the potatoes and cook until tender, about 15 minutes.  Let cool for about 5 minutes, then peel the skin and cut into quarters.

Mix the oil, vinegars, broth and toss with the ptoatoes.  Add mustard, salt and peper and mix well.  Add more broth if your salad seems too dry.  Sadly, I undercooked the potatoes, but I loved the flavor. šŸ˜€  Tony was nice enough not to mention the undercooked potatoes until I said something!

I didn’t wake up in time to go to the gym, but was happy to see today was a rest or light cardio day, so I am going to walk at lunch.  Make it a great day!
