Whenever I announce to Tony that I am going to get up to go to the gym, I think he thinks in the back of his head “I’ll believe it when I see it!” But I like that motivation. I’ve said it before my husband thinks I am beautiful right now at 160 pounds, just as much as he loved me when I got up to 173, and even when I met him at 137.
And the night before last when I kissed him goodnight, told him I was going to get up he said “you are beautiful and you can do anything you set your mind to.” š
As my friend Jenn always says that her husband has “Jenn goggles” and thinks and says she’s beautiful no matter what, I am happy that Tony has “Biz goggles!”
But at 6:00 a.m. when its still dark out, and I am under our down comforter, I have to tell you its extremely tempting to just sleep in. But I knew that Helen was going to be kicking ass yesterday, so I had to as well!
I got out of bed and took my blood sugar reading. Damn. It was 62. But what’s different about me (or maybe every diabetic?) is that I was okay with that number. I ate 1/2 an english muffin with peanut butter for fuel. You see, my blood sugar spikes in the morning after exercising, so I didn’t have any worry of crashing.
50 minutes after my workout, my blood sugar was 175, so I just adjusted my insulin for my breakfast when I got to work. š I did 15 minutes of strength training, and for my cardio, decided to run sprints. Our track is small, it takes 12 laps to run a mile. I sprinted 3/4 of the track, walked 1/4 of the track, and did that for 30 minutes. š
When I got to work I had this hash which is a new favorite – 3 ounces of beef taco meat with 1 egg, baby spinach, red pepper and 100 calorie guacamole (seriously can eat this every day!) with 3/4 cup of blackberries on the side – breakfast comes in at 405 calories, 22 fat, 35 carbs, 10.5 fiber and 19 protein.
Sadly, I forgot my camera at home so you have some shitty blackberry pics!
When I got back from the gym yesterday morning the only thing I had left to do was sear my tuna steak for a tuna steak salad – it was cooked perfectly even though I was multi-tasking a bit making coffee and putting make-up on at the same time. š
FYI. . . Sam’s Club sells individually frozen ahi tuna steaks – there were 8 in a package for around $13. I just put one in the fridge from the freezer overnight – when I got back home from the gym it literally took me 4 minutes to sear the tuna. š
Lunch is baby spinach, carrot, 4 ounce tuna steak, fuji apple salad drizzled with this salad dressing. Lunch comes in at 372 calories, 15 fat, 30 carbs, 5.7 fiber and 26 protein. I was worried I wouldn’t like the chilled tuna since I cooked it and stuck it in the fridge at work. But with the crunchy carrots and sweetness of the apples, this was an awesome combo – I will definitely make this again.
I realized that I had chili mac on the menu for dinner last night. Only one problem, I haven’t made the chili yet. So on to Plan B. I had Tony pick up some smoked sausage. What goes well with sausage? German Potato Salad!
I love German potato salad because its not mayo based and I LOVE vinegar. š
German Potato Salad (adapted from here, I left out the onions and chives)
makes 8, 1/2 cup servings: 98 calories, 1.9 fat, 18 carbs, 2.8 fiber and 2.0 protein
- 2 pounds potatoes
- 1 tablespoon canola oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon white vinegar
- 1/4 – 1/3 cup hot chicken broth
- 1 tablespoon Dijon mustard
- salt and pepper to taste
- garnish with parsley
Wash potatoes and add to pot. Cover with just enough water to cover the potatoes and cook until tender, about 15 minutes. Let cool for about 5 minutes, then peel the skin and cut into quarters.
Mix the oil, vinegars, broth and toss with the ptoatoes. Add mustard, salt and peper and mix well. Add more broth if your salad seems too dry. Sadly, I undercooked the potatoes, but I loved the flavor. š Tony was nice enough not to mention the undercooked potatoes until I said something!
Want to see where my photo shoot is taken? On top of my microwave!
I have some fun holiday stuff for you guys! First one? Me and Tony dancing!

And this one kills me – I made a video of when I dressed up like Guy Fieri for Halloween!

I didn’t wake up in time to go to the gym, but was happy to see today was a rest or light cardio day, so I am going to walk at lunch. Make it a great day!
Biz, you are truly lucky to have someone like Tony in your life. I can only hope that one day someone will finally see me the same way. Le sigh.
Our husbands are awesome! š There are some days where I still can’t believe how unbelievable lucky I am. š
Never met a potato salad that I didn’t like! This one looks delish!
What a great hubby! You are lucky! It is always great when you get to be with the right person.
Tony is a sweetie, and he’s also very lucky to have you Vat!!!! Love the term “Husband” goggles. Dennis wears those too. Bless his heart. LOVE the dance, we’ve been elfing our friends all week. LOVE it!!! Have a great day!!! Elf on!
You seem very in tune with your body and diabetes. At the hospital I work at we don’t begin hypoglycemic protocol until the blood sugar is 60 or below. We do offer a snack and recheck the blood sugar after, but calling the doctor isn’t necessary until it dips below 60.
I love the videos. I am dying laughing. You and Tony are very cute together. I believe my husband has Aimee goggles! He has never made me feel anything other than beautiful to him. He doesn’t care if I lose weight. He only cares about me being healthy. I’m very lucky too.
That video of you and Tony dancing had me trying to keep from peeing my pants [laughing so hard] Not fair Bizzy – you need to put disclaimers on this stuff. š
Tony is great. Pooldad is the same way too – we are lucky eh? Then again, so are they! š
Jealous of all your snowmen! š
Tony is very sweet!
My mother makes the *best* german potato salad, but hers has bacon in it!
Everything is better with bacon š
this came just at the prefect time! I’m in LOVE with warm potato salad with a kick and this fits the bill š
Ah, I think Whit has Melissa Goggles…because I seriously don’t even have to say that I think that might be mad and he always knows what to say to help me realize the good things! Oh boys…we seemed to have found the right ones!
Oh my god, I could not stop laughing at the guy fieri jib jab of you!
I wish I could have been on the phone with you while you were watching it, so you could have started laughing and then I’d hang up on you!
I do find that men are easy to please. My husband actually prefers me with my hair back and absolutely NO makeup. Uh, Yeah, I can do that.
Your husband sound like a definite Gem!
Tony is just too sweeeeeeeeeeeet! Love him. š
And what an amazing lunch!
Oh, your salad looks so good! It looks so gourmet. I actually should tell you that your blog is starting to rub off on me. I am actually cooking acorn squash right now.<<with an actual recipe. And I also toasted the squash seeds too.
š Marion
Wowza! Love it!
Biz Goggles….so cute! I hope Mark has Nicole Goggles!!! š At least he doesn’t seem to mind my sweats and au naturale look in the evenings and on weekends š I love German potato salad too but I’ve never made it homemade. I should change that!
You are a nut case- I love that video!!! Your breakfast looks so yummy and anything with guac on it is good in my book. You make it a great day too Biz!
I look forward to both Wednesday cardio only and Sunday – rest! š
Unlike you I couldn’t wait to get out of the bed the last couple of days – it has been too hot! I already put our blankets on and we’ve had warm 60ish degrees night and day since Thanksgiving. I should just take the dumb blanket off.
That Tony is a sweetheart – love is grand when you have someone who loves the ‘real’ you!
Jealous of your weather Helen! We’ve been sleeping with a heater in our room to keep us extra toasty when the heat turns down at night. š
Awwwwwwwwwwwwwwwwwwwwwwwwwwwwwwwww! Tony….you are just the sweetest/bestest! What a guy. Glad you got up and got the workout in (whoop whoop). Your lunch is just gorgeous- talk about a mid day pickup!
That video is hysterical!!! And Tony? Yeah, he’s pretty amazing! What a lucky girl indeed!
I know what you mean about a warm bed and don’t want to get up to exercise. I’m really having troubles with that lately and I have to admit the bed wins more than the exercise.
Hope you have a great day.
wow that breakfast looks AMAZING!!
Have a great day, Biz. I have one more final in oh, 30 minutes and then I am going to yoga, having my room inspected and HITTING THE ROAD FOR HOME..woooo hoooo š
So excited for you Errign! Woot!
