I was going through the mail yesterday and Tony and I each got a notice from the IRS. Um, never a good sign, right? So I opened it. Apparently they reviewed our 2009 return and found a credit that was erroneously applied to our account. We owe them $45. Fine.
The penalty to pay late? .26 cents. Still okay. The interest charge from 2009 to date? $95.04! So they want us to pay $140.30 by December 19. I am telling them to suck it and appealing it – I truly hate the IRS and if they had balls I’d like to kick them there. Okay, whew, glad I got that out of my system. š
I had another hash for breakfast, this time with the leftover kielbasa from our red beans and rice from the night before – this time with egg, spinach and red pepper – my camera was fully charged too! On the side was half a banana and a few pecans. Gosh I love pecans – especially eating pecan on top of the slided banana. š Breakfast comes in at 405 calories, 29 fat, 21 carbs, 4 fiber and 15 protein.
I loved my work day yesterday – I had my checklist of things to accomplish, and slowly but surely crossed some of them off my list. My desk doesn’t look like a disaster anymore and I hope to catch up on my filing by the end of the week. No interruptions!
For lunch I had chili mac – I had two servings of Paleo Chili in my freezer so I brought one to be served over tofu noodles – I know, not quite Paleo but I love these things – a whole package is only 40 calories too. Some people think they stink – just rinse them well, cook them in the microwave for 1:30 seconds, then rinse them again – my lunch comes in at 388 calories, 24 fat, 15 carbs, 6.2 fiber and 27 protein.
I had pork on the menu, but was wonderding what side dish I should make and remembered I had zucchini. I decided to attempt another (almost) Paleo zucchini pancake as our side dish. The texture was much better!
Zucchini Carrot Pancakes (made 8 – 1/2 a serving is 156 calories, 5.4 fat, 17 carbs, 3.3 fiber and 9.9 protein)
- 3 small zucchini, shredded
- 1 large carrot, shredded
- 1 teaspoon grated ginger
- 1/4 cup panko bread crumbs (to bind)
- 1 teaspoon Dijon mustard
- 2 large eggs
- salt and pepper
- oil of choice to pan fry (I used about 2 teaspoons olive oil)
Shred the zucchini and carrots. Put in two layers of paper towel and squeeze as much moisture out as you can. Add to bowl and mix with remaining ingredients. Heat 1 teaspoon oil in skillet over medium heat – cook for 2-3 minutes a side. Keep in a 225 degree oven to keep warm.
Dinner comes in at 356 calories, 7 fat, 298 carbs, 5 fiber and 47 protein.
Stats for Tuesday:
- 1313 calories, 75 fat, 72 carbs, 18 fiber and 97 protein
- 35 WW points (based on total calories, which includes fruit)
- no exercise
- average blood sugar – 139
Just curious who opens the mail in your house? My answer is: ME. I’ve always been in charge of the mail since Tony and I got together. š

Have a great day!
oh those pancakes look fabulous! love the idea of adding carrot!
That really sucks! As for opening mail, we open our own, but if it is something I pay that comes in his name, I open that and take care of it. I don’t think I have seen tofu shiritaki, but here they call it devil’s tongue for what they are made from, which is like a yam type of thing. They sell them everywhere here, probably because they are Japanese LOL.
We experienced a similar issue with the IRS. They suck. I’m sorry but they really do. We were audited for 3 years. The first year they found an honest to goodness “I mixed up the numbers” mistake. We owed $115 after they applied the interest. Well nice of them to wait a year before sending it to me. For the next two years they managed to find other more costly errors. Thanks for nothing turbo tax. I am not stupid but it’s like reading Greek to me. We sucked it up and paid. Now we have a marvelous accountant/lawyer (he is both!) and no more problems. Such a shame though that they pick on people like us for mere pittances compared to the fraud that is committed every day. Good for you for appealing.
Screw the IRS! They are always picking on someone :/ And I always open the mail in our house, unless it’s a package for my husband or a card, then I obviously let him open that himself.
Ugg, that stinks about the IRS! How annoying!
Those zucchini cakes sure look good though!!!
The IRS is the original bully. And everyone is very anti-bully right now. Don’t let them push you around! š
Well that sucks. I bet they will waive the fee, though.
We each open our own mail. Since I kept my last name when we got married, there is never any mail sent to Mr & Mrs. We each pay different household bills, usually online as well.
That’s horrible, I’d totally kick the IRS in the balls for you! I hate that they can charge interest in arrears, when they have a 7 year audit look back period…can you imagine if they had found a $45 error on your 2004 taxes? Grr!!!
I open it and deal with most of it. If it gets in J’s hands he never opens it and I find it in some random place like a year later. Then we start to get the 2nd and 3rd past due notices. Just last month he somehow got ahold of our car insurance and by the time he found it, it was late. I get so annoyed with him over it!!! When we lived in IL I swear he must have paid every water and electric bill late and had the late fee applied. It’s such a waste of money to me, I’m a cheap ass so I avoid any penny I don’t have to spend.
Those zucchini cakes look amazing!!!!!!
We all hate IRS. š
I couldn’t enter your poll because you left off “Both of you”. In our house it is whomever gets to it first. And don’t get me started on the IRS – but I will tell you, try to call them and ask them to lower the interest. It may just work. Just be nice [like you are] honey goes far with them.
Does the paleo diet work if you don’t fully follow it? Do the foods that are not paleo keep you from losing weight because they interact differently with the paleo foods? Just curious.
Good luck with the filing. BAH – it is the one office job I always loathed, but such a sense of accomplishment once it was done. š
OMG…that is INSANE about the IRS!!! Tools!!!!!! Go get ’em Vat!!!!
Hi lovely! That is so annoying about the IRS. Bahhhh. I do most of the mail opening. Some thing I save for Josh, but I get it and open 75% of it! Those pancakes sound fantastic!
Ugh – the IRS is unbelievable! I was audited once because of a “change” in my return. AKA – I always got money BACK, but the one year I had to PAY them….I get audited. Huh? Go figure. So I lost time off of work so I could bring in my Mother’s death certificate to show proof of her death – again – I had to pay them.
I will never understand them….
Those pancakes look delish! Do you think they’d be as good if I left out the Dijon mustard? For some reason I can’t take it. blech~!
Yep! The only reason I added the Dijon was because I had pork on the side. I loves the mustard! š
Wait? They are charging you late fees? But wasn’t it their error? Wth??
I am currently involved in an IRS audit/appeal. Just appeal…it take forever though. I wish mine was that easy….2 year audit and they aren’t allowing some pretty big costs…..I am appealing to the day I die. HA HA.
Those pancakes look incredible!! Such a fun take on veggies!!
Darn the IRS!! That is just ridiculous!! I’m sorry!!
Charging you for their mistake is seriously lame!!!
I love Shirataki Noodles too. It’s a crazy calorie bargain!
I open up all the fun stuff like bills (hahaha). Everyone gets their own packages and I’m not allowed to open or peek at any deliveries to my husband around Christmastime. š
I open the mail in my relationship. In my last relationship, I never opened it because I trusted my ex. When we were splitting up, I met with my attorney and I found out that my ex had a gambling problem. I would have known about it, had I opened the mail. Moral of the story, always open the mail. LOL.
So much interest added up because it took the IRS two years to look at your tax return – to me, that’s their problem. But then, I don’t have a great attitude toward them either, lol.
Bummer about the tax bill. My husband does taxes and the laws change so often it makes my head spin.
I have tried those toful noodles and I wished I liked them but I don’t.
I open all the fun mail and the bills and everything boring goes to my husband. Of course I let the kids think the ads are for them.
I think if I’d opened something like that letter, I’d assume it was a joke.
I open all mail except obvious packages or greeting cards with Hubby’s name.
The IRS blows. I have to deal with them with my work and I always cringe when I see a phone call come through (and hopefully a co-worker picks it up!!! hehe).
Oh man, sorry to hear about that, suck! I am in a dispute with our car dealership, oh it makes my blood boil. But on the plus side it fuels a good workout. Give ’em hell!
Love love love those pancakes.
I didn’t take your poll because we each open our own mail.
Stupid IRS! Do you think you should maybe send them the original amount due plus the 26 cents and then appeal the interest? Even if you lose your appeal I think you should tell them you need to make payments on the interest LOL!
I plan on sending the $45.26 cents with my appeal. Bastards! š
That is totally stinky about the IRS. I love pecans too. Too much in fact, I eat too many!
I open all the mail. Not that any of it is interesting. š
Ugh, that is the suck!
I open my mail and my dad opens his! I did the same thing when I lived with my ex – we did our own thing, but that was probably because he was a loser and I didn’t want to see his bills hehe š
