I think yesterday was the fourth Friday grill at my office.  At first I thought I was only going to have 7 people, but we ended up with 10 – but you know how I cook, there is always plenty of food!

I threw out the question:  grilled shredded pork bbq or grilled shredded bbq chicken.  I was surprised that the overwhelming choice was chicken!

I decided to marinate the chicken the night before.  This marinade is enough for 1.5 pounds of chicken (I grilled 3 pounds).

  • 3 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon paprikia
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon ground pepper
  • 1.5 pounds of boneless, skinless chicken breast

Mix the wet rub together and pour over chicken in a large ziploc bag.  Just massage the chicken to make sure its evenly coated.  Refrigerate at least an hour, but preferably overnight.

Now I REALLY love how my bbq sauce turned out.  Some people can’t take the heat, but this had just enough punch of heat, but not too overpowering.  It was a huge hit!  This recipe again is for 1.5 pounds of chicken – and I made it 6 servings for 3 PointsPlus each.

  • 2 teaspoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon dry mustard
  • 1/2 teaspoon crushed red pepper (add more for some more zing)
  • 2 tablespoons molasses
  • 1 tablespoon honey
  • 1 cup ketchup
  • 2 tablespoons apple cider vinegar
  • pinch of salt and pepper

This is so easy – just dump all the ingredients into a medium saucepan and simmer over medium low heat for 20 minutes.  That’s it.  Once I grilled the chicken I tossed the shredded chicken in the bbq sauce.  Holy yum! šŸ˜€

I made the mint glazed fruit salad, brought prepared coleslaw and chips and grilled corn on the cob.  Everything turned out so good.

The chicken was definitely the star of the show.  It only took about 15 minutes to grill the chicken, then I let if rest for 5 minutes before shredding and adding it in with the bbq sauce – and the best part is that I get to bring home the leftovers šŸ˜€

Tony and I had to pick up Hannah’s fixed car on the way home from work, so we went with our new favorite pizzas – a pizza place by us sells 8″ individual pizza with 3 toppings for only $5.  We love it because its portion controlled – typically I would order a 16 inch for us to split, and invariably we eat too much.

I had Italian beef, sausage and yellow peppers – my guess is about 15 points for the whole thing, and I ate 3/4 of it.

So today was my WI.  I had no expectations, I didn’t exercise at all over the 4th weekend and only got in 2:55 minutes of exercise for the week.  So it’s no surprise that I stayed the exact same:

I’ll take it!  So my new goals for the week – exercise on the weekends – and by 9:40 this morning I had already done my Saturday workout.

I got a Living Social coupon for six 70 minute yoga sessions for $20.  I went today, told the lady that I had really only done yoga on t.v. and she could not have been nicer.

I started out with some fuel:

There were about 8 other ladies there, all shapes and sizes.  But I could tell I was the “newbie” because the instructor kept on saying “Biz, flex your toes!”  “Biz, pull your houlders back.”  The first time I did downward dog I was like “I know what that is!”

But then the instructor came over and pushed my shoulders back, and pushed my butt down and wow, could I feel the difference.  I’d been doing it wrong all this time!

The 70 minute class flew by, my favorite part was at the end, the lights were turned off, a fan was blowing and there was soft music playing – you could hear a pin drop!  Definitely going back next week and curious to see how sore I’ll be tomorrow.
