It was my bosses birthday yesterday morning, and I was crossing off my checklist to make sure I didn’t miss anything, I walked out without my camera. š But it was a nice spread – I bought bagels with WW cream cheese, had granola, vanilla Greek yogurt, fresh strawberries, grapes and bananas, and made these blueberry scones. Thanks to my co-worker Cassie for sending me a couple pics from her iPhone. š
I did make some alterations due to what I had on hand, but these were light, flakey and not dry. Tony wouldn’t even taste one because he thinks all scones are dry.
Whole Wheat lemon Blueberry Scones
- adapted from www.chocolateandcarrots.com – 6 PointsPlus per Scone
Ingredients:
- 1 1/2 cups regular white flour
- 1/2 cup whole wheat flour
- 1 tablespoon baking powder
- 3 tablespoons sugar
- 1/8 teaspoon of salt
- 5 tablespoons of really cold butter, shredded
- zest of one lemon – about a tablespoon
- 1 pint of blueberries
- 1/2 cup plain Greek yogurt
- 1/2 cup fat free half and half
- 1/4 cup powdered sugar for glaze
- 2 tablespoons fat free half and half for glaze
Heat oven to 425. Combine flour, baking powder, sugar and salt in a bowl and mix well with a wooden spoon. Shred butter pretty quickly with a cheese grater. Add to dry ingredients – I just use my fingers and make sure the butter is incorporated into the flour well.
Add the blueberries and lemon zest and stir to coat the blueberries. Mix in milk and yogurt, just enough until you can start to knead it with your hands. You don’t want to overwork the dough too much otherwise the scones will be more dense. Working quickly not to melt any of the butter, pat the dough into an 8 inch circle. Cut into 8 pieces. I baked mine on parchment paper for 15 minutes, or until lightly brown.
Once the scones cool, mix the powdered sugar with the half and half and drizzle over the top of the scones.
It may look like shredded cheese, but that’s the shredded butter. š I love the combo of lemon zest with blueberries.
I saved one and brought it home to take a picture when I got home:
I ended up having 1 scone, a yogurt with strawberries and bananas and a tablespoon of the chocolate granola – so good and filling and 10 PointsPlus.
So my 101 Days of Summer challenge to myself this week was to swim twice and run a 5k outside. Outside being the operative word. I like maintaining a pace on a treadmill – that’s in my comfort zone. I checked weather.com – 30% chance of rain. I could do it – and if I get rained on, so what?
I forgot my iPod at home because it needs to be charged. That almost stopped me from going, but then I remembered Linzi just ran a race not too long ago – and she ran naked, i.e. no iPod, music – just herself. I drove to the trail, put my essentials in my fanny pack and started running.
I decided to go 1 mile out, then back, and then there is a .2 marker across the trail, which I did 6 times, for a total of 3.2 miles. Guess what my first mile time was? 10:02! That is my fastest mile split running outside! I was shocked when I looked down at my watch. But that’s what happens when I run outside – I start out too fast. It drizzled during mile 2 and I didn’t care! š My next mile was 12:03, and my last 1.2 miles was was 18:02 – which was mostly hills – wow, that was hard! So with hills, I ran 3.2 miles in 40:07 – not too bad! š
For lunch I have upictured leftover chicken alfredo to which I added a cup of steamed broccoli – lunch came in at 12 PointsPlus.
Dinner was pretty boring but tasty. I finally found whole wheat couscous! I made breaded pork chops with whole wheat couscous and corn on the cob – dinner came in at 11 PointsPlus.
And with most office birthday celebrations, we have cake, icecream, etc. I almost always bring a slice of something home for Tony, especially if its something I know he loves. My co-worker Cassie made the best cheesecake I’ve ever had. I licked the knife when I cut a piece to bring home to Tony and then I had one fork full of his. It’s light, airy, not too sweet. Believe me – I am getting that recipe today and posting it tomorrow! This is an insulin worthy dessert!
Stats for Wednesday:
- 33 Points
- 40:07 3.2 miles, 10 minute cool down, 5 minutes stretch
- average blood sugar 109 š
Two more days til the weekend – make it a great day! š
So proud of you Biz!! Way to rock your naked run.! š
Great job on the run! I love my music when I run, but sometimes it’s nice to go without it. Those scones look delicious. Lemon zest and blueberries sound so refreshing and summery.
I love scones and I have never had a blueberry one but now I want one of yours!
Your cheesecake photo is awesome!
Haha, this is an epic title!
Great job on the “naked’ run. I would have had a hard time without music. I can hear myself breathing heavily so it convinces me even more than I’m gonna die and I need to stop. Scones look awesome. Bread products like that are a huge weakness of mine. I would not have been able to stop at one.
Great job on the run…and the scones! They look killer. As does that cheesecake. Bring on the recipe!
Great job on the run!
I love blueberry and lemon combos!
Cracking the hell up at your post title!!! Tony is missing out – those scones look amazing!
Awesome run lady!!! isn’t running without all the gadgets just great! i love leaving my ipod, heart rate monitor and even watch at home for my runs…so relieving sometimes!
I think you’re doing awesome on the running outside. It was definitely harder for me to run outside than on the treadmill. You’ll find you run faster in a race too b/c of the excitement, etc. (Listen to me, I sound all experienced and all. I’ve done ONE 5K. lol) And I looove scones! I use that recipe too.
Average BG 109!!?!? Biz!! You’re amazing! And I had to figure out what you meant by naked! Kind of a funny story…
In Columbus there was a naked bike ride last week to raise awareness for being “green” — I don’t get the connection with the nudity part. But anyways, Mark found an article online about the ride and sent to my parents saying “Nicole is really excited for her duathlon tomorrow, doesn’t is sound fun?” My mom called me so confused and was like, “Nicole, you are a PROFESSIONAL! YOU CAN’T DO THAT!!!” š
I wonder if you will get more hits today from the title
And GREAT job on the run.
Sounds like an awesome run, woo!
I don’t have scones often, but they’re delicious!! And great job on your run – whoo hoo!!!!
wow that really looks like cheese! lol
however cheese sounds really good on scones right now
what a great spread! your boss must have been so excited!
Awesome on the run. And running naked, I don’t think I could ever do it!
Your title made me look twice and lol also. Love the morning spread with all the fruit š
Yay for the outside 5K!!! Not sure I could run naked! I’m a gadget geek.
Looking forward to the cheesecake recipe! It’s one of my husband’s favorite desserts!
I’ve never been a scone fan, but those look tasty! š great job on the run! š whoohoo
HAHAHA…I thought you really ran naked….. Great job on the outdoor run. I’m not sure I could do it without music to keep me distracted.
That cheesecake looks delicious. YUM!
What a great spread! I’m sure your boss must have loved everything! Fresh grapes are amazing and the scones look super yummy. Great job! Way to rock the run too! I’m a naked runner on the regular. I don’t like to run with an ipod outside- I feel like I’m less aware of my surroundings and I feel more relaxed when I run without music. Nice work on the time!!
Can I just say – I love that you photographed the cheesecake outside. So fresh, so lovely! š
I had no clue where you were going with that title…then opened with it being your boss’s birthday…. I braced myself! š
Congrats on the run! Great times!
Counting down the minutes until you post that cheesecake recipe!
Awesome job on your run. Of course you know if you force yourself to start of slower, your later miles will be faster. It takes practice though!
Can’t wait to see that cheesecake recipe. I have one that I consider to be the ultimate so I want to compare. Your boring dinner looks pretty good to me. We tend to cook very simply, just like that, in the summer.
Your title made me LOL!
Yay on the 5K!
The scones look delicious! I need to eat them more often than I do. You are doing so awesome with running!
Mmmm, I looooove scones. I like ’em crumbly, but not bone dry, blegh! Go you on that 5k. I am struggling to run a 5k here in Asheville because of the elevation. I’m going to try some trail running soon, see if that helps š
Go Biz go on running outside!!
