It was my bosses birthday yesterday morning, and I was crossing off my checklist to make sure I didn’t miss anything, I walked out without my camera. šŸ™  But it was a nice spread – I bought bagels with WW cream cheese, had granola, vanilla Greek yogurt, fresh strawberries, grapes and bananas, and made these blueberry scones.  Thanks to my co-worker Cassie for sending me a couple pics from her iPhone. šŸ˜€

I did make some alterations due to what I had on hand, but these were light, flakey and not dry.  Tony wouldn’t even taste one because he thinks all scones are dry.

Whole Wheat lemon Blueberry Scones


  • 1 1/2 cups regular white flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon baking powder
  • 3 tablespoons sugar
  • 1/8 teaspoon of salt
  • 5 tablespoons of really cold butter, shredded
  • zest of one lemon – about a tablespoon
  • 1 pint of blueberries
  • 1/2 cup plain Greek yogurt
  • 1/2 cup fat free half and half
  • 1/4 cup powdered sugar for glaze
  • 2 tablespoons fat free half and half for glaze

Heat oven to 425.  Combine flour, baking powder, sugar and salt in a bowl and mix well with a wooden spoon.  Shred butter pretty quickly with a cheese grater.  Add to dry ingredients – I just use my fingers and make sure the butter is incorporated into the flour well.

Add the blueberries and lemon zest and stir to coat the blueberries.  Mix in milk and yogurt, just enough until you can start to knead it with your hands.  You don’t want to overwork the dough too much otherwise the scones will be more dense.  Working quickly not to melt any of the butter, pat the dough into an 8 inch circle.  Cut into 8 pieces.  I baked mine on parchment paper for 15 minutes, or until lightly brown.

Once the scones cool, mix the powdered sugar with the half and half and drizzle over the top of the scones. 

It may look like shredded cheese, but that’s the shredded butter.  šŸ˜€  I love the combo of lemon zest with blueberries.

I ended up having 1 scone, a yogurt with strawberries and bananas and a tablespoon of the chocolate granola – so good and filling and 10 PointsPlus.

So my 101 Days of Summer challenge to myself this week was to swim twice and run a 5k outside.  Outside being the operative word.  I like maintaining a pace on a treadmill – that’s in my comfort zone.  I checked – 30% chance of rain.  I could do it – and if I get rained on, so what?

I forgot my iPod at home because it needs to be charged.  That almost stopped me from going, but then I remembered Linzi just ran a race not too long ago – and she ran naked, i.e. no iPod, music – just herself.   I drove to the trail, put my essentials in my fanny pack and started running.

I decided to go 1 mile out, then back, and then there is a .2 marker across the trail, which I did 6 times, for a total of 3.2 miles.  Guess what my first mile time was?  10:02!  That is my fastest mile split running outside!  I was shocked when I looked down at my watch.  But that’s what happens when I run outside – I start out too fast.  It drizzled during mile 2 and I didn’t care! šŸ˜€ My next mile was 12:03, and my last 1.2 miles was was 18:02 – which was mostly hills – wow, that was hard!  So with hills, I ran 3.2 miles in 40:07 – not too bad! šŸ˜€

For lunch I have upictured leftover chicken alfredo to which I added a cup of steamed broccoli – lunch came in at 12 PointsPlus.

Dinner was pretty boring but tasty.  I finally found whole wheat couscous!  I made breaded pork chops with whole wheat couscous and corn on the cob – dinner came in at 11 PointsPlus.

And with most office birthday celebrations, we have cake, icecream, etc.  I almost always bring a slice of something home for Tony, especially if its something I know he loves.  My co-worker Cassie made the best cheesecake I’ve ever had.  I licked the knife when I cut a piece to bring home to Tony and then I had one fork full of his.  It’s light, airy, not too sweet.  Believe me – I am getting that recipe today and posting it tomorrow!  This is an insulin worthy dessert!
