I think it was all your good vibes yesterday, and the fact that it was a short work week, but when I called last night to see if I had to go back for jury duty I was told that there will be no more jury trials this week, and they thanked me for my service – woot! Now let’s see if it will be another 25 years until I get called again. š
I have no food plan this week and its driving me crazy. Yesterday for breakfast I had 2/3 cup of cottage cheese, an apple and a mini breakfast sammie – this plate comes in at 7 Points.
I brought my bike to work and at lunch headed to the trail. I quickly asked Lori, my biking expert, if she thought I could ride 7.2 miles in my lunch hour, and she assured me I could. So off I go, I get to mile three of the trail and I am at a major intersection. WTF? The path has a giant yellow line in the path and then it just abruptly stopped.
I crossed the street because I could ride on a paved part (not on the busy street) when another biker rode by and I asked him where the trail went. He said I had to ride to the next stop light, cross over the busy road, and I’d be back on the path. So even with two short stops to cross a road, I biked the 7.2 miles in 44 minutes – not bad!
I think next time I’ll just go back and forth on the trail, like ride two miles out, then back, then two miles out and back, for a total of 8 miles, now that I know I can ride it in my lunch hour.
I was hungry when I got back! Lunch was two mini turkey sandwiches, with lots of mustard, and a delicious strawberry apple salad with some of the spinach I bought at the farmers market on Tuesday. I tried Newman’s own light raspberry walnut dressing and it was delicious, although 2 tablespoons is almost too much. One tablespoon would have been plenty. Lunch comes in at 9 points.
Work was busy, which I love. It makes the day go by so much faster. One of my co-workers took Friday off before the long weekend, when I came in yesterday, she had this on my desk thanking me for covering her desk – now I feel like an ass because I didn’t do anything for her when she covered my desk for jury duty. š But I love pens and post-it notes. š Thanks Cassie!
How does my refrigerator get so messy so quick? On Tuesday night I couldn’t stand it anymore, so I took everything out, threw out some condiments I know I’ll never use, and in the process, forgot about 1/2 a pound of fresh ground beef that needed to be cooked, green peppers, cooked brown rice, and 1.5 pounds of cherries I forgot I bought.
So that night I cooked the beef, added the cooked brown rice, 1 cup of leftover pasta sauce and put it in a container. I also blanched two large green peppers. Tony likes his stuffed peppers to be soft, not crunchy.
Biz’s Grilled Stuffed Peppers
- 1/2 of one green pepper – 8 Points Plus
Ingredients:
- 2 large green peppers
- 8 ounces ground beef (mine was 20% fat – yum!)
- 1 cup pasta sauce
- 1 cup cooked brown rice
- 1 teaspoon dried oregano
- 1 ounce pepperoni
- 2 ounces shredded mozzarella
Cook the ground beef, then drain off the fat. Mix in the brown rice, pasta sauce, oregano and mix well. Bring a pot of boiling water to boil, then blanch the green peppers for about 5-8 minutes, just until a knife can slide through.
On the day you grill, heat up the beef mixture for 2 minutes in the microwave. Cut the peppers in half. Divide the beef mixture evenly, then put 1/4 ounce of pepperoni on the top, then cover with 1/2 ounce of mozzarella cheese.
Grill for about 8-10 minutes, making sure the bottoms don’t get too charred.
I had a cup of canteloup on the side, so dinner comes in at 8 Points. š
Hannah and I nixed the movie idea having mixed reviews. I had to get my eyebrows done, so we went to Walmart to get them threaded. Swear to God the worst pain for 4 minutes, but they turn out great and it doesn’t look like I’ve been in a fist fight when I get them waxed.
We then went to the pool – we dove for rings, had races across the pool. We basically didn’t stop for 45 minutes – it was a fun workout! Then the hot tub – it felt so good, but what’s even better? Going from the hot tub back into the cool pool – so refreshing.
Tony and I then tried to catch up on our DVR, where I consumed wine because I figured I deserved it having earned 10 activity points. I gotta stop that! š
And a quick flashback Thursday – had my Dad still been alive, my parents would be celebrating their 49th wedding anniversary!
My Mom was 21 and my Dad was 23. See how thin my Dad is? He lost 30 pounds before he got married, and everyone chalked it up to nerves, maybe the heat. They went on their honeymoon to Niagra Falls. While there, one night in the hotel my Dad was not doing well at all. My Mom thought it was a heat stroke, but in any event, he went to the hospital.
It was there he found out he was diabetic. My Mom practiced giving shots into an orange! If you think being an insulin dependent diabetic is a pain in the ass now, imagine having to sterilize every syringe in boiling water!
Stats for Wednesday:
- 31 points, including wine
- 10 activity points earned for biking and swimming
- average blood sugar 129
Question of the Day: Did your parents stay married, or did they divorce?
Yay for getting out of jury duty!!!
this just reminded me i have to start calling jury duty today!!!
Your food looks amazing for not having a plan. I agree it is much harder without a plan. The stuffed peppers look tasty!
I’m pooped out just reading about all your workouts…you rock! Love the stuffed peppers idea. I like my peppers soft, too, if they’re stuffed. Crunchy if they’re in salads, etc. That’s a great photo of your parents’ wedding. You really look like both your parents but most especially like your dad, I think. A handsome couple, indeed!
Great job on the bike ride. I need to dust my bike off and get some miles on it. I never even got on it last summer.
Now that you decided to nix the movie I can tell you I really wasn’t a fan of the book and wouldn’t expect the movie to be any better.
My parents divorced when I was only a few months old and the my mother went on to remarry 4 times. I have step brothers and sisters I never even met.
Have a great weekend!
Hi Biz, LOVE the idea of stuffed peppers on the grill, and what a fantastic photo of your parents!!!!! My parents JUST celebrated their 52nd anniversary. They drive each other crazy sometimes, but are still in love. Dennis and I got married later in life, so we’ll be LONG gone by the time our 52nd anniversary would roll around. Mind you, medical science may make some great advances, and we’ll be around!! š God, that sounded morbid. Wasn’t meant to. Have a great day!!!!!!
My parents have been married for 25 years, but were previously married before each other. I feel like I’m rare because hardly any of my friends had parents that were still together. I think it’s too easy to get divorced today and people don’t take marriage as seriously as they used to. Our society is whack I tell you!
I’m impressed at the bike ride on your lunch. On my lunches I hide from people. haha.
Poll answer: My folks got divorced after nearly 25 years. I wonder sometimes if it’s easier if they get divorced when the kids are really young because then, that’s just the way it is. It’s hard to me, now, getting used to two Christmases, two Thanksgivings and a new stepmom, and no real central family location like we used to have.
what movie were you guys going to see? i’ve wanted to thread my eyebrows too, but i have heard about the pain. it sounds like it’s worth it though!
you look like such an adorable mix of both your parents, it’s uncanny!
That is cool that you were able to bike on your lunch break. I have commuted to work on bike before but don’t think I ever thought about taking the old bike for a spin on my lunch break. Brilliant! š My parents are still married…30 years this Dec! š
wowie that is a beaUtiful salad biz!! my parents are happily married for 29 years :). i really hope to have a marriage as successful as them one day!
– Beth @ http://www.DiningAndDishing.com
My parents are still married. I think this year is 29 for them. Maybe 28. I never knew you’d have to sterilize the needles in boiling water! Wow, what a pain!
Wow, you’re lunch and dinners always look so delicious! And good for you on your activitiy points.
My parents were together for 36 yrs. Sadly my dad passed away 1 yr ago (on the Memorial Day Holiday). He had just turned 65. He was also diabetic. At first he started w/ insulin for a few years, but after a while he was able to control it w/ his diet and stopped the insulin altogether. In the end, cirrhosis is what did it.
By the way, I love that you have your day w/ your daughter. My daughter is only 8, but I think I’m going to start an “our” day too! š
My parents got divorced when I was five, which is totally fine with me because I could NEVER picture them being together. I lived with my mom & saw my dad 8 days a month because of their custody agreement, but I moved in with my dad full time when I was 16. š
What a fun idea w/ the pepperoni on the stuffed peppers! That salad topped w/ strawberries looks so good, love that combo!
Yay to no more jury duty!
What a great way to shake up your workouts. I so much prefer to bike a real bike and run on the real road. I do not belong in a gym!
My parents are still together despite them being an arranged marriage. They were married at 18 and 23. My husband’s parents are still together too and they were married when they were 17 and 18. His mom needed a note from her mom to get married!
Great job on the bike ride! Sounds awesome š what a fabulous way to spend your lunch break!! And that strawberry apple salad looks totally delicious. Fruit in salads rocks. Glad you are DONE with jury duty!!
LOVED the picture of your parents. I had no idea he was diabetic! Did that have anything to do with him passing? I wasn’t following you when that happened. They look so beautiful together–I see him in you. My parents, by some miracle, are still married. They are so dysfunctional but at the core of their marriage, somewhere buried really deep, is love and I guess that it’s enough to get them through. LOL! They are such a mess.
You look exactly like your dad! š And your parents look so young in that picture, yet THEIR parents look so old (and something tells me they were younger than I am right now). As you know, my parents are still married, as are Jeff’s. Wonder if my kids will find girls who’s parents are still together?
Woohoo for no more jury duty – you got to experience it without all the misery!
I’m with you on staying on the bike path and just riding back and forth – sounds safer that way. But then, I’m a scaredy cat when it comes to biking with traffic, so there’s that.
The stuffed peppers look delish!
I can’t imagine having to boil every syringe! Worse yet is what a time to find out our diabetic! š
What a cool picture! I can see you in your mom’s smile.
My parents were separated and my mom had moved back to Vermont (where she was from, having moved to California after marrying my dad) and then found out she was pregnant with me. So my grandma (Dad’s mom) drove out there to get her and bring her back here. So I have never known my parents to be a married couple. And honestly, I can’t imagine it!
My husband lost a bunch of weight prior to his diagnosis too. I’m wondering what the chances are of my kids developing diabetes since it runs on both sides of our family…but they are all type II.
My parents got married when they were 18 and still together!! They will both turn 60 this year! My mom never left my dad’s side the entire year of going through cancer treatment/bone marrow transplant. She slept in chairs, on cots, ate hospital food…she was amazing, and he would not have gotten through it all without her. They have been an incredible example!
And I’m craving that strawberry salad now!
Wow, I can’t imagine having to sterilize each needle! Insulin pumps are a pretty amazing invention!
I bet those would be great smoked. Do you own a smoker?
Biz you SO look like your dad!!!
1. I expect that strawberry apple salad on my front porch by noon tomorrow. Blackmail will be involved if it doesn’t happen. gigggle
2. You have super nice co-workers. That pen/post it not pack is awesome. š
3. I love your parents’ wedding picture. Please give my best to your Mom. I can’t even imagine having diabetes so long ago, but your Mom sure was a good mate – if it happened to me now Pooldad would have to do it for me. I faint at the site of needles. No, really.
4. That is a great bike ride. Great exercise. š
5. How did you like the movie [did you go?]
Well, that’s all I got. Hugs and all the best! :Waving at Tony:
wow…grilled stuffed peppers…what a great idea!
Love the old pic of your parents on their wedding day. Yes, I cannot imagine having to deal with diabetes back then…it seems we have come so far…and yet, have so far to go too! Both my grandparents were diabetic…actually what killed by grandfather, and now my mom is as well.
great job on racking up those activity points!!
Yep, pretty sure you just made stuffed peppers look about 1000x better than usual! Yay for not having to go back for jury duty.
Hope you have a great day!
Hurray for no jury duty! Man, I hate getting blindsided like that at work.
Do you even realize how many people wouldn’t attempt a workout of any kind during lunch if they were going to work out later? You rock Biz!
Biz, look on google maps and on the left is a place for bike routes and there is a tutorial too!
I’ve never had stuffed peppers but it is one more thing I’m looking forward to trying when my nest soon empties.
