I think it was all your good vibes yesterday, and the fact that it was a short work week, but when I called last night to see if I had to go back for jury duty I was told that there will be no more jury trials this week, and they thanked me for my service – woot!  Now let’s see if it will be another 25 years until I get called again. šŸ˜€

I have no food plan this week and its driving me crazy.  Yesterday for breakfast I had 2/3 cup of cottage cheese, an apple and a mini breakfast sammie – this plate comes in at 7 Points.

I brought my bike to work and at lunch headed to the trail.  I quickly asked Lori, my biking expert,  if she thought I could ride 7.2 miles in my lunch hour, and she assured me I could.  So off I go, I get to mile three of the trail and I am at a major intersection.  WTF?  The path has a giant yellow line in the path and then it just abruptly stopped.

I crossed the street because I could ride on a paved part (not on the busy street) when another biker rode by and I asked him where the trail went.  He said I had to ride to the next stop light, cross over the busy road, and I’d be back on the path.  So even with two short stops to cross a road, I biked the 7.2 miles in 44 minutes – not bad!

I think next time I’ll just go back and forth on the trail, like ride two miles out, then back, then two miles out and back, for a total of 8 miles, now that I know I can ride it in my lunch hour.

I was hungry when I got back!  Lunch was two mini turkey sandwiches, with lots of mustard, and a delicious strawberry apple salad with some of the spinach I bought at the farmers market on Tuesday.  I tried Newman’s own light raspberry walnut dressing and it was delicious, although 2 tablespoons is almost too much.  One tablespoon would have been plenty.  Lunch comes in at 9 points.

Work was busy, which I love.  It makes the day go by so much faster.  One of my co-workers took Friday off before the long weekend, when I came in yesterday, she had this on my desk thanking me for covering her desk – now I feel like an ass because I didn’t do anything for her when she covered my desk for jury duty. šŸ™  But I love pens and post-it notes. šŸ˜€  Thanks Cassie!

How does my refrigerator get so messy so quick?  On Tuesday night I couldn’t stand it anymore, so I took everything out, threw out some condiments I know I’ll never use, and in the process, forgot about 1/2 a pound of fresh ground beef that needed to be cooked, green peppers, cooked brown rice, and 1.5 pounds of cherries I forgot I bought.

So that night I cooked the beef, added the cooked brown rice, 1 cup of leftover pasta sauce and put it in a container.  I also blanched two large green peppers.  Tony likes his stuffed peppers to be soft, not crunchy.

Biz’s Grilled Stuffed Peppers

  • 1/2 of one green pepper – 8 Points Plus

Ingredients:

  • 2 large green peppers
  • 8 ounces ground beef (mine was 20% fat – yum!)
  • 1 cup pasta sauce
  • 1 cup cooked brown rice
  • 1 teaspoon dried oregano
  • 1 ounce pepperoni
  • 2 ounces shredded mozzarella

Cook the ground beef, then drain off the fat.  Mix in the brown rice, pasta sauce, oregano and mix well.  Bring a pot of boiling water to boil, then blanch the green peppers for about 5-8 minutes, just until a knife can slide through.

On the day you grill, heat up the beef mixture for 2 minutes in the microwave.  Cut the peppers in half.  Divide the beef mixture evenly, then put 1/4 ounce of pepperoni on the top, then cover with 1/2 ounce of mozzarella cheese. 

Grill for about 8-10 minutes, making sure the bottoms don’t get too charred.

I had a cup of canteloup on the side, so dinner comes in at 8 Points. šŸ˜€

Hannah and I nixed the movie idea having mixed reviews.  I had to get my eyebrows done, so we went to Walmart to get them threaded.  Swear to God the worst pain for 4 minutes, but they turn out great and it doesn’t look like I’ve been in a fist fight when I get them waxed. 

We then went to the pool – we dove for rings, had races across the pool.  We basically didn’t stop for 45 minutes – it was a fun workout!  Then the hot tub – it felt so good, but what’s even better?  Going from the hot tub back into the cool pool – so refreshing.

Tony and I then tried to catch up on our DVR, where I consumed wine because I figured I deserved it having earned 10 activity points.  I gotta stop that! šŸ˜€

And a quick flashback Thursday – had my Dad still been alive, my parents would be celebrating their 49th wedding anniversary!

My Mom was 21 and my Dad was 23.  See how thin my Dad is?  He lost 30 pounds before he got married, and everyone chalked it up to nerves, maybe the heat.  They went on their honeymoon to Niagra Falls.  While there, one night in the hotel my Dad was not doing well at all.  My Mom thought it was a heat stroke, but in any event, he went to the hospital. 

It was there he found out he was diabetic.  My Mom practiced giving shots into an orange!  If you think being an insulin dependent diabetic is a pain in the ass now, imagine having to sterilize every syringe in boiling water!
