While I am sure Tony wishes he was already busted out of the hospital by now, he is doing really well, and his surgeon is very happy with his progress. No one has made mention of when he is coming home, but Tony and I have been down this road before. As I’ve said time just stands still at a hospital, so we go in with low expectations on when he’s going to get sprung!
I wish I could be there with him all the time. As his sister says, I have a calming effect on Tony. If he knows I am in the room, he can let his guard down, and within a few minutes of my being there, gently touching his forehead, he is peacefully asleep. 😀
I spent all day Sunday there, and didn’t get home until 9:30 p.m. I still haven’t gone grocery shopping yet, and the more I thought about it, I knew I could come up with something using my freezer and pantry.
I had forgotten that I bought 10 zucchini’s for a dollar almost a week and a half ago and was really surprised that they were still good! I meant to add sausage to this zucchini quiche but completely forgot to add it and am happy that I did. It is light, delicate and delicious. There is enough protein with the eggs. 😀
Crustless Zucchini Quiche (printer friendly version here)
1/4 of pie is a serving: 204 calories, 9.8 fat, 6.6 carbs, .9 fiber and 16 protein = 6 WW Points
Ingredients:
- 1 large zucchini, sliced in rounds
- 1 clove garlic, minced
- 2 large eggs
- 1 cup egg whites
- 1/2 cup fat free half and half
- 3 ounces cheddar cheese
- 1 teaspoon dried parsley
- 1/2 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon crushed red pepper
Directions:
- Heat oven to 350.
- Spray a pie pan with Pam. Layer the sliced zucchini on the bottom of the pie pan.
- Mix garlic, eggs, egg whites, half n half, parsley, salt, pepper, crushed red pepper.
- Pour over zucchini.
- Sprinkle the shredded cheese over the top – and bake for 35 to 40 minutes, or until the eggs are set and slightly browned.
- Cool for at least 10 minutes before slicing.
I forgot both my cameras at home yesterday – so this picture was taken with a leftover at night, in my wonderfully fluorescent kitchen lighting. 😀 I had this slice with 1/2 an everything bagel with a schmear of fat free veggie cream cheese – breakfast was 9 points.
I went to visit Tony at lunch. He still is a touch queasy, so I ate lunch at my office – I had a cup of my cauliflower cheese soup and a side salad – no pics! 🙁 Lunch came in at 9 points.
Since Hannah has most of her college classes today, I had to come home and let our dog out before going to the hospital. Our dog misses Tony so much – they are usually home together all the time. Whenever I walk in the door, he looks behind me to see if Tony’s behind me. He mostly sleeps in his cage, which he never does, and toggles between sleeping with me and Hannah at night. Poor puppy.
As I was driving home, I was trying to think of what I had in the freezer that would make a quick dinner. I remember I bought some Morning Star farm patties and started there.
Back in 8th grade, I remember it being a big deal to walk to Burger King on Friday’s with a big group of people. I think back in the day $2 was all you needed for a sandwich (burger) fries and a drink – maybe not even that much. One of my favorite things to get there was the breaded Parmesan chicken sandwich – at the time I didn’t even like pasta sauce, so this was quite a culinary leap for me!
My sammie: 1 chik’n patty, 1.75 ounce sesame bread, 3/4 oz. mozzarella cheese, 1/3 cup sliced zucchini (that I nuked for 30 seconds), 1/4 cup marinara sauce, sprinkled with dried oregano. I cooked the chik’n patty in the microwave, then heated the pasta sauce. I built the sammie and then put it in the toaster oven to melt the cheese.
Before microwaving the patty – not sure it looks “fresh off the grill” considering there were only “grill” marks on one side. Um, and it may be a tad bit freezer burned.
The verdict? It was really good – but if I didn’t know that “chik’n” patty was on the sandwich, I never would have tasted it. However, this was a filling sandwich. I ate this at 5:45 and it kept me full the whole night – not bad!

- 30 minutes of walking the dog (15 minutes in the morning and 15 minutes at night)
- average blood sugar 102

I’m just catching up with some blogs and just read the good news about Tony’s NO-CHEMO, Biz!!! Woo hoo!!!! So delighted!!! I hope he gets to go home soon…but at least he’s in the best possible place right now, surrounded by doctors 24/7. But obviously, you are the best doctor for him too! 😉

Good job making do with what you have on hand. Every once in a while I decide to inventory my freezer, pantry and frig, making a list of all I find and dreaming up meals to use up all the stuff I have on hand. I am always amazed at what I find!

So glad Tony’s feeling better and better. It’s funny – they say nothing about discharge until all of a sudden they won’t be able to get rid of him fast enough! I chuckled when you said you had your cauliflower soup at work since Tony’s still a bit queasy…you know my youngest son always says cauliflower (and brussels and broccoli) make the whole house smell like “ASS”, so that was a benevolent gesture to spare Tony of that smell!
