I love not having to set the alarm clock, lingering over a cup of coffee, and I just put another loaf of bread in the oven for breakfast – I love the smell of bread baking! I need to get more flour so I can make more.
We have almost summer temps this weekend – in the 80s! My drive into work was interesting, every direction I looked there were these lines in the sky:
I’ll give you five guesses on what I had for breakfast. Are you sick of seeing my egg sammies?! They keep me full for so long 😀
I went to the gym and I channeled Helen and Shelley and I ran on the treadmill! I ended up doing 40 minutes – I would run for 5 minutes at 5.2 mph (11.5 mph pace) and then speed walk at 4.0 for five minutes and toggled back and forth. I ended up then doing 10 minutes of triceps and biceps on the machine, and 5 minutes of abs on the ball – it felt good!
Lunch was more leftovers (as most Fridays are!). Chili mac – 1 cup pasta, 1/2 cup Cincinnati chili, 1/2 cup black beans, torn baby spinach and orange peppers. Lunch comes in at 473 calories, 43 carbs, 47 protein, 3.6 fiber.
I think I’ve mentioned it before, but my office has this deluxe coffee machine – Hannah would literally drink coffee all day long if she had access to that machine! We have four different sugar free syrups – I decided on a caramel coffee with whip cream and tiny chocolate chip sprinkles – this comes in at only 30 calories! 😀
No party pizza Friday? I know, I still can’t believe it myself! But second best choice? Taco fiesta! Hannah was home for dinner so she helped me pull it all together. I ended up making my own tostadas – just deep fried corn tortillas for a minute on each side. They puffed up though!

Great news – my friend Mara made it to the next round of Project Food Buzz! So excited for her . . . in other news, still waiting to hear about going to San Francisco – fingers crossed still! 😀

Your meals never cease to make me drool. That egg sammie looks great!! I had Andrew make me one yesterday and it had some leftover sliced pork on it. It kept me full allllllll morning long! Perfect breakfast in my opinion!! 🙂

Oh gosh if I had that coffee machine I would be drinking coffee all day at work, what machine is it?
We have the Kuerig with lots of flavours but our coffee looks nothing like that 🙂
I did an interval run today too – the treadmill had an automatic setting and you could chose your “running” and “recovery” speeds – I went with 5.6 and 5.0 and it would alternate every 2 minutes for 30 minutes. How far did you end up running? Good for you!

It was 2.7 miles – the last 5 minutes was a cool down – not breaking any records! 😀

I would love to have such warm temps right now. I am not sure why, but it is warmer outside than inside and I am freezing my behind off right now. Cute little tostadas. I did fish tacos last week and I think that I need to do them again soon. I do have a Mexican recipe coming up for this week.

So not sick of the sammies yet. I know what you mean about them keeping you full. I LOVE that about eggs. I usually have similar though yours look WAY prettier than mine! I usually just throw pizza sauce on a bagel thin with some egg beaters.

Long time no see. I appear to be way behind the times. Congrats on your “new” site. I too love my weekends as they are the only time I have to really get some cooking done. Now I just need to find my way back to my kitchen!
That sounds like a great workout! I love interval training. When I was training for my half marathons, I found the treadmill sooo boring, until I started the walk/run thing. It’s my favorite way to workout now! (except I can’t run right now due to injury).
This morning…gonna try Zumba for the first time. I figure if my 55 year old sister can do it, I can too!
