I gotta get this post in quick.  I woke up to swim this morning – it looked like all the storms were south of us because it was sunny to the north.  I pulled in the parking lot of the pool and then it hit – torrential downpours and windy!  It is now only raining but I think its only a matter of time before it hits us.

Thanks to all your kind comments yesterday about my failed chicken wing dinner the night before last – they made me put my life into perspective, and one failed dish is nothing to get worked up about!  Hannah wasn’t even home for that dinner, but when she got back home from work she asked how dinner was.   She was like “I’ll try your side dish!”  but then I pointed her to the trash can 😀

She stopped by my office yesterday and brought me this:

Since it was raining yesterday morning, I decided to make my 30 minute marinara sauce in the morning for dinner and then had time to do this:

this was really good!

Breakfast was an egg white wrap with a gala apple – lots of Tabasco please 😀  Breakfast comes in at 298 calories, 31 carbs, 22 protein, 7.6 fat and 9.2 fiber.

At lunch I did 45 minutes on the elliptical while watching the Sox Game – we ruled the first game and won 12-2, I won’t talk about the second game 🙁

I think Tony makes fun of my sweaty t-shirts, so this may be a daily picture 😀

Lunch was so good!  Remember that giant pork butt Tony and I had the other night?  Well after it cooled, I picked off all the meat, diced it up and simmered it in apple cider vinegar, crushed red pepper and Tabasco – east North Carolina style.  My plate: 1 point bun, three ounces of pork bbq, white beans mixed with a tablespoon of jalapeno barbecue sauce, watermelon and celery and carrot.

I got home and there was a package for me!  I won Beth @990 Square’s giveaway – thanks B! 😀  I need to incorporate more veggies in my diet – hopefully this will help 😀

I was looking through my Clean Eating magazine and found a recipe for Bolognese Sauce.  Their recipe called for 2 pounds of fresh roma tomatoes – you had to boil water, blanch the tomatoes, cool them in a water bath, peel, seed. . . blah blah blah.   I wanted a quick weeknight version and this turned out really good.  I also added more meat and added some seasoning – they only called for 1/4 tsp. of salt and no basil, oregano or even Italian seasoning!

Biz’s 30 Minute Bolognese

  • 1 carrot, peeled and cut into chunks
  • 2 celery ribs, cut into chunks
  • 1 green pepper, seeded and cut into chunks
  • 2 teaspoon olive oil
  • 1 pound meatloaf mix (mine was 2 parts ground beef to 1 part ground pork)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon oregano
  • 1 cup 2% low fat milk
  • 1 cup beef broth
  • 1 28 ounce can crushed tomatoes

Put carrot, celery, green pepper and canned tomatoes in food processor.  Heat oil in dutch oven.  Add tomato mixture and cook for about 10 to 15 minutes until the carrots soften.  Meanwhile, in a separate pan, brown meatloaf mix.  Once the pink is gone, drain the fat, add to the tomato mixture and add remaining ingredients.  Simmer for 15 more minutes – done!

However, both Tony and Hannah didn’t like the pasta – it was an Italian pasta I picked up, but they both thought it tasted low carb or whole wheat.  And because of all of your wonderful comments and the loving support of my family, I didn’t flip out when I burned the garlic bread! 😀

I also had a side salad:  dinner comes in at 412 calories, 62 carbs, 14.3 protein, 12.2 fat and 11.5 fiber.

I realized the only way I am going to hit my 1800 calorie intake is to add in some snacks.  So not pictured snacks today:  2 ounce banana bread, 1 serving almonds, a Viactiv calcium chew, 1/2 a banana and a skinny latte:  556 calories, 76 carbs, 19 protein, 22 fat and 5.1 fiber.

Stats for Tuesday:

  • 1778 calories, 262 carbs, 87 protein, 49 fat a whopping 41 grams of fiber!
  • 21 minute abs
  • 45 minute elliptical
  • no alcohol 😀

Is anyone watching Master Chef?  The second round cooked last night to make their signature dish – I was trying to think what mine would be and I am not sure!  Although I did make my chicken tikka masala for my lunch today – the combination of flavors is just amazing to me.  And I finally came up with a chili recipe that works – my buffalo chicken chili.
