These warm temps in our neck of the woods is making me want to bring out my outdoor furniture and gazebo already.  But, it being Chicagoland, I know mother nature has her way of toying with us with summer like temperatures in March, only to snow in April.

I am starting to be like blogger Kath Eats who has oatmeal nearly every single day of her life.  So I give you . . . ANOTHER PARFAIT!  This time it was Chobani mango – 7 WW points.

With the temps in the high 60’s I decided to be like Lori and get my maiden 2012 bike ride on!  I still had my bike stored at work, and since I have an air compressor (not sure if that’s the correct name – Tony may correct me on that one!) it took all of a couple minutes to get air in my tires and take off.  I work a jacket for all of about 5 minutes – it was gorgeous!  Although, it does look prettier when everything is GREEN.

This 50 minute bike ride was hard – part of the trail is pretty hilly, which I conveniently forgot from last fall.  Some of the hills I was huffing and puffing so hard, no one would know that I could run kinda fast!  Felt good though – its just such a nice break in my work day and I feel refreshed when I get back, even though its depressing to sit behind a computer all afternoon. 🙁

So here I give you ass on a plate . . . that tastes delicious!  I had baked up some baked potatoes the other day, just to have on hand.  When I was looking for something else in my pantry, I realized I had an unopened jar of sauerkraut – what??!!  I love sauerkraut.  I could eat it straight up out of the jar without even heating it up.  But Skippy, no sauerkraut for you – after I put in one cup of sauerkraut into fatsecret.com, while a cup has only 27 calories (basically zero points) it has 939 grams of sodium per cup!  I’ll need to up my water intake for the rest of the week. 😀

On top of my 1 cup of sauerkraut, I have a 5.5 ounce baked potato (4), 3 ounces of lean pork (3) with 2 tablespoons of Buffalo Wild Wing Spicy BBQ sauce (1).  This delicious plate of food comes in at 8 points.

 

Tony didn’t have much of an appetite for dinner last night, so it was all me.  I ended up making a GINORMOUS taco salad – while it looks like a ton of food (and took me nearly 30 minutes to eat) it’s really mostly vegetables:  3 cups chopped romaine, carrots, celery, yellow pepper and cilantro (0), 3 ounces of cooked 85/15 ground beef (5), 1/2 ounce of cheese (1) and my dressing was 1 tablespoon salsa, 1 tablespoon hot taco sauce and 1 tablespoon of light ranch dressing mixed all together (1) – so 7 points for this whole salad. 😀
