10 years ago today I had my first date with Tony! We had talked on the phone for probably 20 hours before we met. I was just coming back from visiting my brother Charlie in Des Moines for the Memorial Day weekend. You new readers can read the story of how we met here.
It really was love at first sight. Two days before we were to get together for dinner he asked me where I wanted to go. I replied “I don’t care where we go, what we eat, what you wear, or what I wear. I only want . . . you.”

Okay, you are going to think this is weird, but I bought these at the store last week and they have been in my fridge ever since. Truth be told, I was kind of scared to open them! Sophia, have you ever seen canned hard boiled quail eggs before??
I was also afraid at what I would see (or smell!) upon opening the can!

I dried some off on a paper towel.
And guess what I decided to make with them? Breakfast pizza! Except I used a light flatout wrap, 1/4 cup pizza sauce, 5 quail eggs (only 39 calories for 5!) and 1.5 ounce mozzarella cheese. Baked at 375 for 10 minutes.
The perfect bite splashed with Tabasco! The quail eggs taste exactly like real eggs, except the yolk tasted way creamier to me, almost like a deviled egg filling! this whole pizza was my breakfast: 268 calories, 24 carbs, 23 protein, 12.2 fat and 10 fiber.
I wanted to do the bike machine again at lunch today – I had hopes of doing a 10 mile trail, but the longest one was only 4.4, so I did that one twice, and then a 1.5 sprint ride at the end. Can I tell you I love seeing the finish line? And you know what I pictured? All the 39 other 101 Days of Summer challengers lining the sidelines and cheering me along – so thank you to everyone for virtually pushing me!

Lunch was more stir-fry – the closer we get to the end of the week, the less creative my dishes are becoming! Lunch comes in at 315 calories, 44 carbs, 20 protein, 3.8 protein, 3.8 4.8 fiber.

Most of you know I hardly ever eat snacks. But since my breakfast and lunch were so low in calories (not intentional!), I had two snacks: 1/4 cup almonds and 1 oz. of peanut butter stuffed pretzels, or i.e. crack pretzels! Snacks totaled: 278 calories, 21 carbs, 9.1 protein, 18.9 fiber and 3.9 fiber.

For dinner I defrosted two kinds of meat – one small steak that Tony and I split, and one giant chicken breast . . . or so I thought! When I went to take it off the grill I realized it was two small ones stuck together, so I had to cook the “inside” a couple more minutes!

The temperature dropped last night and it was so comfortable on the deck while I grilled. Love the view from our deck!
My plate: 4 oz. steak, 4 oz. chicken, 4 oz. rosemary potatoes and 1 tablespoon of Buffalo Wild Wings spicy sauce. Dinner: 617 calories, 39 carbs, 78 protein, 14.6 fat and 3.8 fiber.
In the mail I got these True fruit things. At first I thought it was like Crystal Light, but upon further investigation, turns out its like have a “squeeze of fresh fruit” in your water.
I had the lemon one in my water at dinner – and while it did taste like lemon, I think I’ll stick with the real thing. Have you seen this before??

Guess who got up at 5:45 this morning? Yep, that would be me! As soon as I hit publish, I am getting changed to do a Group Power class at my new gym from 7:00 to 8:00 a.m.! Erica said it’s a lot like the Body Pump class that she teaches, so I am excited!
Stats for Day 3:
- 1,478 calories, 128 carbs, 130 protein, 50 fat and 23 fiber
- 47 minute, 10.3 mile bike ride
I’d say this challenge has lit a fire under my ass so far – how about you?!
I’m gonna be honest here – canned eggs creep me out. It just seems so wrong!

wow. quail eggs! i love food blogs – learn something new every single day!
so far staying focused, my first weigh in monday, recieved some goodies in the mail from mexio, these sugar things i love and had to put them in freezer so i wouldnt eat them figure my treat for each 10 pounds i lose, hopefully can get that off quickly im dying to eat one…my goal for each 10 pounds…
This challenge has totally lit a fire under my ass! I’m finding a way to squeeze in longer and harder workouts and making better food choices. It’s great! I love it!

Biz, I have tried quail’s eggs. I ADORE them. That’s the only time I actually like hard-boiled eggs. But mine were fresh, and I’ve never tried the canned ones before. LOVE how adventurous you are! You’ll do fine in Asia if you ever visit! 😀

Sigh, I love first dates. Too bad we can only have them once with our men. Ours was at a NJ diner. We both had turkey clubs, FF, and iced tea. Such boring food, but 10 days later we were saying “I love you!” So mushy. Well congrats to you both, you seem super dooper happy!!

You are a brave woman for eating eggs out of a can! I don’t even like the hard-boiled eggs you can get at the grocery store (in the egg section) that are pre-packaged. Something about them just looks fake to me! Great job on the cycling! Today is my day off from the gym but I will work extra hard tomorrow!
I’ve never tried quail eggs but now that you said they taste like regular eggs, I won’t be as intimidated given the opportunity. 🙂

All the food looks great! Okay – the quail eggs are suspect, but I trust you about the food, Biz, so they must have been okay.
I lol at the “crack” pretzels – amen to that. I could no more eat “1 oz” than I could eat 5 single potato chips. Not humanly possible.

I might have to get canned quail eggs for my husband; he loves deviled eggs. (Gah! I can’t stand them, but I like making them for him–I put a little horseradish in them for a spicy kick!)

It’s kind of interesting that you mention Barry Whites voice. I used to leave messages on Biz’s voice mail as Barry White. Those messages typically were not romantic, Barry would accuse her of stealing his Butterfingers and Baby Ruth’s. I always thought Barry was a large man, and food might be on his mind more often than romance.

Let me just say the food looks delicious, and can you tell how you made the rosemary potatoes? I’ve never been able to make them right. Weird because potatoes aren’t really hard, but maybe you have a trick I don’t know.
Hey Laura! I used new potatoes, simply because you don’t have to peel them! I put them in a pan with a bit of olive oil and about 1/2 cup of water, then cover them until they are cooked through – depending on the size around 15 to 20 minutes. Remove the lid, dump any excess water out, and add a tablespoon of butter, rosemary (I used dried), salt and pepper and cook about 5 – 10 minutes more until crispy. 😀 Hope that helps!

My mom used to buy canned quail eggs when we were kids. I don’t remember what she used them for, but I sure do remember snagging a couple when she wasn’t looking. The insides are creamier for some reason. Funny how everyone thinks that canned eggs are weird, but that Eggland’s Best bagged hard-boiled eggs are a good idea! 🙂
I got a sample of that true lemon/lime stuff too and it was a no go for me too. It’s no skin off my back to buy a lemon and slice it for the real thing!
