Today couldn’t be any different from yesterday! No more pity party of one. I have so much to be thankful for, one bad day isn’t going to get me down! Thank you to everyone who wished me a better day today!
We had a beautiful morning – so sad not to see the screens of our gazebo up, but love the color of the trees!
I got up early to make my spaghetti squash/spinach lasagna for my lunch – I added diced yellow pepper this time – so good! I love using cottage cheese instead of ricotta!
Breakfast was a one egg/egg white/spinach cheese omelet.
Since I was up so early, I saw that Meghann had made a dip for her apples, but thought it needed an extra kick. My dip? 1/4 cup greek yogurt, 1/8 cup sugar free Smucker’s pancake syrup, 1 teaspoon no sugar added peanut butter and a splash of cinnamon – thanks for the idea Meghann!
My blood sugar was around 90 before my walk, so I decided to have a sourdough pretzel. (I may have a small bag of these in my desk drawer!)
What a gorgeous day we had – partly sunny and highs of almost 70! Look at our beautiful walk!
I am kidding! This picture is in my office space – but I love looking at it, especially this time of year! Here was our walk:
Then it was lasagna time! This is one serving – about 420 calories.
Since I was having such a good day, I made myself a cafe mocha!
Never too early for the snowman mug!
I had to work late, so I picked up chicken and mashed potatoes from our grocery store – the chicken tasted like it had been sitting under a heat lamp for a couple hours! I had one wing, and about 1/2 a cup of mashed potatoes, when I looked at Hannah and said “bring up the deep fryer!”
Three taquitos later and I was a happy camper! Gotta scoot – we have so many things recording on the DVR, no one can change the channel! Thanks for all the virtual hugs today – you guys rock!

I’m not a huge fan of cottage cheese, but I guess you could put it in a food processor to get a smoother texture.

I love Fall colors and the changing of leaves on the trees. Too bad I live in a place where it is pretty much sunny all year round. Sometimes I wish I live in a place where I can experience all 4 seasons. The path lines with changing colors of leaves must be so nice to pass by everyday.
