30 minute shred – Level 3! OMG, its been too long and it was really hard. But I stuck with it! Dinner was quick to put together tonight, so I knew I’d have time and I was right – after getting home, doing shred and fixing dinner – we were eating by 6:15!
I started out the day with spicy oats – 1/2 cup oats to 1 cup water, 1 Pam fried egg and two slices of bacon.
I ended up bringing a giant salad and a cup of my acorn squash bisque for lunch. I brought a cup of soup for my friend, and she couldn’t believe how few ingredients it was and it tasted so good! And healthy to boot! Adding the fat free half and half really makes it creamy!
See what I mean about a big salad! I added radicchio to the mix, and I’ve tried it several times, but I really don’t like it – its too bitter.
But the soup more than made up for that!
I had tons of peppers and leftover steak, so steak fajitas it was! Now you know why dinner came together so quickly! I made a fajita mix based off of a recipe Tony found for me while I was chopping the peppers.
Fajita Mix
- 1 tablespoon cornstarch
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon ground cumin
I thought it could have been spicier, but I tend to under spice when I make things other people will eat – so each bite of my fajita had a splash of Tabasco!
On the side I had 1/2 cup quinoa, mixed with Frank’’s hot sauce, diced jalapeno, and about 2 tablespoons of corn.
I hit the jackpot on the $1 rack over the weekend! Look at how many tomatoes I got for $5! I had to throw about 7 tomatoes out because they already turned.
They barely fit my biggest stock pot!
Stats for the Day:
- 1237 calories
- 48 fat
- 78 protein
- 122 carbs
- 17.8 fiber
- 35% of my calories were from fat (much closer to 30%!)
- 45 minute walk at lunch
- 20 minute – level 3 – 30 day shred
I am in the process of loading up my iPod with new songs Hannah got from the library – I am probably going to be at the copier most of the day tomorrow, and it helps the time pass when I am listening to tunes!
Hope everyone made it back in the swing of things with the work week – my week is going to be all screwed up since I had yesterday off – tomorrow won’t feel like Wednesday already!

Those fajitas, especially with the quinoa, look like they definitely made for a great dinner! I love dinners that come together quickly but don’t scrimp on flavor or healthiness! Fajitas are great for adding tons of veggies into the mix, and Mexican flavors always make things taste better.
That soup looks amazing! Great food for you today.

You just reminded me of Mexican flavored quinoa!! I made it once before and totally forgot how yummy it was! I made it w/ salsa and then added the beans and corn like you did! I’ll have to do that again now that I’ve been reminded!
I rather do level 3 Shred than level 2. On 2 she just kills my shoulders. She cracks me up when she says, “I want you to feel like you’re going to die.” Oh and when she says 400 pound people do jumping jacks (that makes me do them even when they hurt.) The food looks really good.
Wow, you got in some major exercise today! I can’t seem to do much after work beyond a bike ride…Shredding it is amazing!
I don’t like radicchio either, and pick it out of my salads.

I think I need to make spicy oats for B. He hates oatmeal but he loves eggs and bacon and especially, spicy food, so three out of four ingredients has got to be a winner!

Yum – hot peppers! I just bought tiny sweet peppers, but my husband gave me the best idea to stuff them with jalapeno cream cheese and put on the grill – look for it soon!
