Finding Inspiration in Hannah (and day 1 of 30)

I am so proud of my Hannah.  She came home vacation, having eaten her way through wonderful food – Chinese buffets and good ole North Carolina Pork BBQ. She decided to give Weight Watchers a try, since that is how I initially lost my 75 pounds (my highest weight was 210 – not pretty on someone who’s only 5 feet 2 inches tall!).  Weight Watchers...

Breakfast Pizza!

I have Jen to thank at Bean Town Baker for this mornings breakfast.  Hands down the perfect breakfast in my book – pizza! I made a whole wheat version of this dough over the weekend – the best part about this dough is that it keeps in the fridge for up to two weeks.  😀 So my base was 4 ounces of whole wheat dough. ...

Beer Can Chicken and Julia Child

Beer Can Chicken and Julia Child
Before I get on to dinner – thanks to everyone who responded to my previous BSI post – I am glad that everyone seems to be in my side!  That being said, maybe its just easiest to cut and paste this post, adding the next weeks host to the top of the list for that week – does that make sense?!    And the prize you win...

I’d like to have a quick discussion about BSI

I may be ruffling some feathers here, but I wanted to make a comment on the past few BSI challenges.  The BSI challenge started way back last fall, until it stopped at Christmas.  I kept waiting for it to resurrect, and when it didn’t, I decided to bring it back with BSI – Zucchini!  The rules are quite simple: Pick an ingredient, preferably one that...

Sopa Azteca ala Rick Bayless

Sopa Azteca ala Rick Bayless
I am posting the original recipe, but I did have to make a couple of substitutions – as I like a creamy (not tomato chunky) sauce, I used a small can of tomato sauce and one can of V8, and of course, left out the onions! Recipe from Frontera Grill/Topolobampo Serves 4 to 6 Like guacamole, tortilla soup has a place, I feel, in practically...

Monday Morning = Egg Sammie!

As I was putting my breakfast and lunch together this morning, I was surprised to still see that I had some light english muffins!  I wasn’t sure they were still good, and they even felt a little “gummy” on the outside, but no signs of mold so I was in! After I toasted it, it was fine: one light Thomas multigrain English muffin 6 slices deli...

My new favorite barbecue sauce!

My new favorite barbecue sauce!
Tangy, sweet, spicy, zippy!  These are the words that come to mind when I think of this barbecue sauce on my tongue!  I have these people to thank for the recipe!   I only changed the sugars they used to my sugar free/low sugar. North Carolina Mustard Barbecue Sauce 1 cup yellow mustard 1/2 cup splenda 1/4 splenda brown sugar 3/4 apple cider vinegar 1/4 water...

Ten Dollar Dinners!

Gotta make this quick – I am just about to see the Next Food Network Star’s first show – I am so glad Melissa won!  I was starving when I woke up this morning for some reason – I defrosted one of my homemade bagels, this one was garlic, added canadian bacon and a fried egg – with a delicious sliced peach on the side...

Memory Lane

My Mom has spent the better part of four months scouring over home photographs.  Um, turns out my Dad liked to take a few pictures!!   She put together a box for me, my sister and brother.  What surprised me the most was letters I had never seen from family members who lived on the east coast who responded to my mom’s letter back in February...
