As I was putting my breakfast and lunch together this morning, I was surprised to still see that I had some light english muffins!  I wasn’t sure they were still good, and they even felt a little “gummy” on the outside, but no signs of mold so I was in!

After I toasted it, it was fine:

  • one light Thomas multigrain English muffin
  • 6 slices deli ham (60 calories per package)
  • .6 ounce cheddar cheese (extra fine so it melts really well!)
  • 1/2 cup egg beaters
  • 3 ounces raspberries (which have a whopping 5.5 grams of fiber for that serving size!)
Mmmm...cheesy!

I lucked out with these raspberries – they are REALLY ripe and I got two pints for .59 cents each!  The package I opened this morning only had one bad one!

Breakfast comes in at 342 calories, 9 fat, 35 protein, 36 carbs and 13.5 fiber! :D

Not bad – 1/2 of my daily requirement of fiber already consumed!
