As I was putting my breakfast and lunch together this morning, I was surprised to still see that I had some light english muffins! I wasn’t sure they were still good, and they even felt a little “gummy” on the outside, but no signs of mold so I was in!
After I toasted it, it was fine:
- one light Thomas multigrain English muffin
- 6 slices deli ham (60 calories per package)
- .6 ounce cheddar cheese (extra fine so it melts really well!)
- 1/2 cup egg beaters
- 3 ounces raspberries (which have a whopping 5.5 grams of fiber for that serving size!)
I lucked out with these raspberries – they are REALLY ripe and I got two pints for .59 cents each! The package I opened this morning only had one bad one!
Not bad – 1/2 of my daily requirement of fiber already consumed!
My friend and I are doing our 45 minute walk at lunch. You’ll have to come back for lunch for the recipe for Rick Bayless’ Sopa Azteca!

We caught up on all of our DVRed TC: Masters episodes last night and are rooting for Rick. I like Michael Chiarello too, and cannot WAIT to see this “fight” b/w him and Dale – how inappropriate!!
