Wow, I thought tonight would never get here! I don’t know what it is about Friday afternoon workdays, but it almost seems as if the clock is going in reverse!
Breakfast was 1/2 a multi-grain bagel with 1 egg and an ounce of cheese – this bagel is from Panera and I love the oats on the outside!
With a slice of watermelon on the side which was so good and refreshing!
Lunch was leftover pork tostadas – 2 ounces pork, 2 tostadas, pickled jalapenos, a little queso fresco cheese.
With sliced cucumber and apple on the side:
My plan was to make pizza as it is Friday night, but with temps in the 90’s, not so much! I thought hamburgers, but that’s kind of boring, so I searched and came up with Gyros Burgers! These were so flavorful – as Tony said “the flavor pops in your mouth!”
- 1/2 pound ground beef (I used sirloin)
- 1/2 pound ground veal
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/4 teaspoon cumin
- 1/2 teaspoon salt
- 2 pocket pitas, split
- diced cucumber
- diced tomato
I sliced some Farmers market cheese to munch on the side:
Since I thought the meat was really “soft” and put the burgers in the freezer while the coals came to temp. That way the meat had a chance to sear on the one side and it was a perfect flip! Perfect crust!
My messy plate! I had half of a pita, 5 ounce patty (before cooking), cucumber sauce, and diced cucumber. This one is a keeper!
Gotta scoot, we have neighbors coming over to have drinks outside – I’ll catch up on your blogs over the weekend!
Those gyros burgers look awesome! We’ll definitely have to give them a try. Your watermelon looks so yummy! I hate to buy it when it’s just the two of us b/c J isn’t a snacker and it always seems to go to waste. I get it almost every weekend at his parents’ house, though! It’s been really delicious this year, thankfully!!
The gyros burgers look amazing. And the cheese, the cheese – I can just taste the cheese…. It’s so beautiful… Okay, yes, I have a problem with cheese…
