My plan was to make a cauliflower gratin as my side dish, but I had SLIM pickens for cheese – I need to fix that pronto!! I was on tastespotting, and saw someone made fried zucchini, and I was sold. I did use whole wheat bread crumbs though! 😀
I had to laugh when I saw a comment on my previous post about colored pens – Hannah and I could have about 1000 pens and still seek out new ones!
Look at the great deal I got on this 8.5 pound boneless pork loin!
The zucchini was dipped in a little bit of flour, and egg/water wash then just plain whole wheat bread crumbs. The good thing about the deep fryer is that it really holds the temperature – these were not the least bit greasy!
I ended up eating 3.5 ounces of my pork – dipped in this hot bbq sauce from Buffalo Wild Wings!
My dinner came in at 527 calories, 28 fat, 29 protein, 36 carbs and 2 fiber. I really had to guess on the fried zucchini, but I overestimated just in case.

I am off to finish cleaning the kitchen, and possibly making refrigerated pickles and jalapenos! The White Sox game doesn’t come on until 9:00. Hannah is off to catch a movie with friends. She’s going to see Orphan, an R rated movie. Now that she’s 17, she’s positive they won’t card her!
She tried to see the Saw movies (GROSS!) when she was 15 and 16 but was denied!
