All the credit goes to Tony for finding these potatoes – they are so cute and VERY purple!
I boiled them last night until tender, then diced and Pam fried them this morning.Ā I added 2 ounces of New York strip left over from last night, 1/2 cup egg whites and 1/2 ounce cheddar cheese.

way to add some color to your meals – although you always do a great job with colorful foods!
so….if they taste like regular potato’s, are there any benefits to purple vs. regular? or just the fun visual effect? š
That’s a good question Jen! I’ll see if I can find out š
