Purple Potato Hash
All the credit goes to Tony for finding these potatoes – they are so cute and VERY purple!
I boiled them last night until tender, then diced and Pam fried them this morning. I added 2 ounces of New York strip left over from last night, 1/2 cup egg whites and 1/2 ounce cheddar cheese.
Busy work day, but it will go by fast – can’t believe its almost Friday again! 😀
Morning break is over – see you at lunch for leftover lasagne!
