Most of my cilantro had gone bad, which was a bummer – I only got 1 tablespoon!   But it still turned out good!  I’ve always disliked mayo based potato salads, so I decided to sub sour cream and yellow mustard instead.

Cilantro Potato Salad

  • 1/3 sour cream
  • 1 tablespoon yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon chopped cilantro
  • salt and pepper to taste
  • 1.8 pounds cooked, diced potatoes (that’s what mine ended up after I weighed them)
  • 1 diced hard boiled egg

Mix everything but the potatoes together, then throw the cooked potatoes and and mix well.  I actually cooked my potatoes this morning and kept them in the fridge all day and mixed it all together when I got home from work.

I had 1/6 of this recipe – my serving was 132 calories, 1.3 fat, 27 carbs, 2.3 fiber and 4.1 protein – not too bad!!

I picked up a pork shoulder yesterday at the 50% off meat counter – a 3 pound roast cost just $4.85!  I put it on the lowest setting, and Tony turned it off around 3:30 this afternoon.  When I got home I took it out to cool some more and then shredded it, pulling all of the fat off – the dog loved that part!

Then I just put in a pot on the stove and mixed it up with bbq sauce – so quick and easy!

All together dinner comes in at 521 calories, 9 fat, 26 protein, 87 carbs (corn has 14 carbs by itself!) and 4.6 fiber.
