So not only did I start the pizza wheels turning by mentioning I wanted party pizza Friday on my last post, but I also made the dough and had it on the counter – then later when I talked to Tony on the phone I was like “all we need is mozzarella cheese, a red pepper and whatever you want on your side of the pizza!”
My day also started out with more breakfast pizza! This time I used 4 ounces of pizza dough – wasn’t a huge fan of the low carb tortilla yesterday.
This is 4 ounces of dough, 1/4 cup marinara sauce, 1 ounce diced Italian sausage leftover from last nights pasta dinner, spinach, 1.4 ounces provolone and one egg.
I then put it on a plate and finished cooking it for about 5 minutes at the office in our toaster oven. I actually walked in carrying it on my plate and a co-worker got on the elevator and was like “where the hell did you get that?” I said I just made it at home!
I ate the whole thing it was so good! Perfectly thin crust!
Lunch is what I call “throw shit in a bag” and make something up! The base of my soup was a small Thai Kitchen curry noodle package. I used half the seasoning packet in that, added 1 cup of chicken broth, then put in silken tofu, 1/2 can of canned crab, handful of spinach, and sliced jalapenos. While it looks like ass, the flavor was wonderful – the fresh sliced jalapenos really spiced up the broth!
We had HUGE storms come in yesterday afternoon. 70+ mile an hour winds – Tony said its the worst storm he’s since here since we moved her 9 years ago! Our neighbors tree broke and blocked our road!
Luckily it was a swift storm, and while we got storms later last night, it was not as bad.
I decided to make a thicker crust this time (Tony likes that one better than my cracker crust). It was good, but I missed my crunchy crust!
I put the jalapeno on my side just so there is no confusion when cutting at the table!
I also put parmesan cheese on the crust – we liked it!
What? You still haven’t made my pizza dough?? This time I made it in the morning and then left it on the counter all day – ready to roll when I got home!
- two cups flour
- 1 cup warm tap water
- 1 teaspoon salt
- 1 package yeast
Mix with a wooden spoon in a bowl, put a piece of plastic wrap on it and you are good to go!
Heaven on a plate! I had three pieces – I may have overestimated the calories, but I think its around 680 calories, 64 carbs, 30 protein, 24 fat and 4 fiber.

- 1,556 calories, 162 carbs, 81 protein, 65 fat and12 fiber
- no exercise, I ran errands at lunch
We have a wedding to go to today! I love weddings, I almost always get teary at them, no matter how well I know the couple. Tony was the best man at the brides parents wedding – I think in 1984?

We had horrible storms here too! Where my mom lives there were TONS of trees and power lines down. Super scary stuff!!

Your pizzza is killing me. My favorite dough is similar but I do add a tsp of sweetener (either honey or sugar) and a tablespoon of oil b/c it makes the dough more supple, IMO. I like to do a thick crust and didn’t like it without the oil. I also use 1/3 whole wheat flour to 2/3 white. My hubby likes the crust so much that he always says, “you should just make a plain crust so I can eat it that way. I did and he drizzled honey on it and we ate the whole thing in one night! You have convinced me to try going fat-free on the crust again since you have such good results. Maybe it works better with all white flour.
That breakfast pizza gets me EVERYTIME. One day I will prep the breakfast pizza ingredients and dough the night before so I can actually make it in the morning!
I love thick pizza crust too. When I had deep dish pizza in Chicago…I was in heaven. But crispy and thin pizza crust is always a winner too!
