I don’t have any egg whites, so I went with a whole egg sammie this morning – I just love the bulk egg whites give the breakfast sammies – so this seems a bit flat to me – but tasty nonetheless!
- toasted Arnold thin
- 1 egg
- 1 ounce deli corned beef diced
- 1 ounce baby spinach
- .75 ounces four pepper goat cheese
- jonagold apple sliced
The first time I really tried goat cheese was in a restaurant that I worked at – they had the most amazing appetizer – breaded goat cheese on garlic rounds of bread on a bed of procuitto with a balsamic glaze – my mouth waters just thinking about it (and now with the deep fat fryer I may be able to recreate it!).
In any event, the nights I managed I could have anything (except lobster!) on the menu for dinner – and I almost always had this goat cheese appetizers. The servers were like “you could have filet mignon and your having goat cheese??”
I bought jonagold apples because the fuji apples were $4 a pound! I like this variety – they are really juicy!
My roasted tomato and red pepper soup turned out so good! So on tap for lunch is tomato soup with the classic grilled cheese – come on back for the soup recipe!
