Before I get onto dessert, dinner turned out pretty good – although I overcooked the pork roast, even though I took it out 10 degrees before done – it was flavorful but just a bit too tough – everything else was great though!Ā I was going to make a balsamic glaze, but realized I am REALLY low on balsamic vinegar – on to plan B!
In my cooking light magazine they had a recipe for an asparagus salad with soft poached eggs and prosciutto – I stole the dressing from that recipe – it was so good!
Mix together:
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh grated parmigaino-reggiano cheese
- 1 tsp. garlic
- 1/4 tsp. salt
- 1/4 tsp. cracked pepper
- 1/2 tsp. dijon mustard
- 2 tablespoons extra virgin olive oil
I cooked the asparagus in the microwave using the “fresh veggie” setting.Ā They are still crisp tender this way – then I finished them off on the grill with the lemon glaze:

Then I made garlic bread – crusty bread with butter, fresh minced garlic and Italian seasoning:

I ate 1/4 of the twinkie and it was heaven in my mouth!Ā The filling melted into the cake and it was stunning!Ā Joe really loved the angel food cake too!

And since I had fried zucchini as my vegetable today, it was only fitting to have fried banana slices as my fruit drizzled in caramel sauce!

I am so tempted to get on the scale tomorrow, but feel I should wait until July 1 – that leaves me with like 8 days to redeem myself from today!Ā I have a feeling Jillian is going to kick my a$$ tomorrow!

So i was watching the Travel channel today and they showed like Extreme Eats places all over the us- and there’s a SUPER famous “Fish and chips” stand in NY that serves fried EVERYTHING, like chicken, fish, twinkies, snickers, the usual- BUT you can bring in your own of anything for them to fry, haha like burritos and sushi..it was hilarious!
