We decided to do the chicken on the Weber grill last night. We were watching an episode of Dinner Impossible recently, and one of the recipes he did was herb roasted chicken. I got fresh rosemary and thyme and large peeled garlic and stuffed that under the skin. The only problem I had was that I used natural wood coals, which burn hot and rather quickly, so I ended up having to add coals twice before the chicken was done!
So we ate dinner in stages last night! Around 7:00 I served the salads:
Then around 7:45 we ate the grilled corn:
And then around 8:30 we had the chicken!
The chicken was so flavorful – definitely worth the wait!! After dinner I removed all the herbs and garlic, and chopped them up to make rosemary garlic chicken noodle soup – I’ll probably have that for lunch later today.
Hannah is working again today, so Tony and I headed to our favorite breakfast place. I had a taste for pancakes, and once I found out that they had sugar free syrup, the decision was made!
Breakfast comes in around 532 calories, 22 fat and 48 carbs (35% calories from fat, 26% from protein and 36% from carbs).
I am off to deep clean our freezer – I seriously have no idea what is even in there! Wish me luck! See you later today – hope your weather is as gorgeous as ours!
