I don’t know what it is about shredded zucchini, but it always results in the fluffiest eggs!  This morning’s breakfast was:

  • 1/2 cup egg whites
  • .5 ounce goat cheese
  • 2.5 ounces shredded zucchini (squeeze as much water out as you can before adding to eggs)
  • .5 ounce hard salami, sliced
  • 1 whole grain english muffin
  • 3 large strawberries

I had every intention of getting up and going to the gym this morning.  I did get up, however, blog reading took over and the next thing I knew it was time to make breakfast and start getting ready for work!  It’s icky out too – I need some sun!!   Still plan to do Shred at lunch today – I may have to do commercial jumping jacks during Biggest Loser to get more cardio tonight!

I had just a quick taste, but my Quinoa Lasagna is delicious!  Come back at lunch for the recipe – best part is one serving (which is huge!) comes in at 404 calories and almost 8 grams of fiber!  Off to get ready for work – see you at lunch!
