This Spinach and FF Feta Egg white Omelet is quick, delicious and easy.

It took me about 40 minutes, but we have two clean fridges!  Mind you, the second fridge in the basement is typically the “beverage” fridge.  But around any holiday, it becomes the food overflow, and sadly, many food items get forgotten in there!

I didn’t even realize I had a whole container of egg whites, that are about to expire in three days, so an egg white omlet was in order.

Guess who went to the gym this morning even though her bed was really toasty and its crappy cold and raining outside?  Me!  I did 40 minutes of hill climb on the elliptical this morning.   And my co-worker and I are on tap for Day 14 of Shred at lunch today.

You have to come back at lunch today to get my asparagus guacamole recipe – 1/4 cup is only 16 calories and it actually tastes as if there is avocado in it!   See you then!
