Since I had Friday off, my whole weekend has been off – Saturday felt like Sunday all day! We slept in so long on Saturday morning, I didn’t make breakfast until nearly 11:30 – so this was brunch – 1 scrambled egg, 2 slices of bacon, 2 sausages and an English muffin – reminded me of a true diner breakfast!
Check to see if your deli sells bacon. Our store sells this “Gypsy” bacon for $3.99 a pound. Most of the bacon sold in the refrigerator case are only 10 or 12 ounces for the same price. And at the deli you can request how thick you want the bacon cut.
So while I was doing some computer work on Saturday I hear this barking outside my window. Um, turns out Kyle the Squirrel was trying to get my attention! What did I do? I jumped up and got her some almonds! You see that blue dish to the right? That’s usually her food dish, I haven’t filled it up in a while!
I am kind of getting obsessed with making granola lately. I am still trying to find the perfect blend – all crunchy, clustery. I read online that if you whisk up an egg white until frothy, add that at the very end before baking. I figured I’d give it a try!

I was thrilled that after the tray cooled, I was able to break the granola into clusters – super crunchy!
One problem. This morning, the granola was chewy again. WTF?! I ended up baking the granola a second time, clusters and all, for another 15 minutes at 300 and let cool. Success! This morning they were still nice and crunchy.
I still hadn’t gone to the grocery store. I was thinking I would just run to the store and pick up something up. I asked if Tony had a taste for anything, and he said “we have egg noodles in the cupboard, do we have stuff to make beef stroganoff?” Well, I dove into the back of my freezer and lo and behold I found a one pound piece of chuck roast. Done! I also found a package of these veggies – I cooked up 3/4 of a cup of these veggies to add into my beef stroganoff.

I ended up only using 1/2 a cup of cooked noodles – pure comfort food!
As Tony and I were flipping channels, I started cruising through Instagram hash tags and found cats with wigs! I literally could not stop laughing at this picture!
I sent it to my step-son and daughter in law – they have a cat and I know my step-daughter-in law would totally get wigs for their cat!
Sunday morning, Tony made me breakfast – spicy tomatillo scrambled eggs, toast and apple. This also was breakfast and lunch!
Since I was pretty lazy on Saturday, I had to make up for it yesterday. Only one problem – holy cow was it super stormy! I never did get an Insanity workout done since I had to shut off the computer while it was stormy. But it was a perfect day to spend in the kitchen!
I ended up making Tony pretzel bites for his football snack – with jarred queso sauce on the side.
I’ve decided to keep my breakfasts and lunches simple this week. Sometimes I think I have to make something different every single day to keep things interested, but you know what? Simple works too! I made a jalapeno popper quiche for 4 of my breakfasts this week – recipe coming tomorrow! 1/4 of the pie is only 247 calories! Paired with a Chobani and some fruit, healthy breakfast – done.
I also made a pot of chili for later in the week. And since pork bbq ribs were on sale (1 slab of ribs was only $6!). I slow roasted them in the oven for 3 hours at 250. I made another batch of Rudy’s BBQ sauce and ended up finishing up the ribs under the broiler.
With coleslaw on the side, it tasted like summer, even though we are half way through November!
I have a favor to ask. My brother’s friends house got flooded on Halloween and they pretty much lost everything they own. They were even hosting an exchange student and had to find a place for them to live.

We’ve had water in our basement, but other than losing some snowmen, we didn’t lose much. I can’t imagine losing everything! So maybe we can skip a couple Pumpkin Lattes this week and pay it forward?
Today brings Week 9 of the Strength Training – todays legs workout looks pretty intense! I haven’t done every single workout of this training, but probably 80%. Since this is the last phase, I am going to try to do my best to do every single workout these last three weeks. Only 44 days until January 1 – let’s finish the year out strong!

I love that dang squirrel. Ours hasn’t been showing his face too much lately and I think it’s b/c of the stray cats our neighbor is feeding. He stays up in his tree. I usually wait until he demands to be fed but I should probably put something out for him – bet he’s running low on reserves. I always see him bury nuts when I give them to him – so cute!
I always buy bacon at the meat counter of the butcher shop. They call it “slab” bacon and whatever, there’s seriously like no difference except the cost. It’s $3.99 a pound here, too, but sometimes if I get more than a few pounds (packaged separately, of course), he’ll give it to me for $3.49 a pound.
And damn! I was hoping your granola would stay super crunchy. Are you using instant, quick, or old-fashioned oats? I wonder if the type of oats makes a difference…

So sorry to read about the flood. Ay, yi, yi….Mother Nature is ANGRY these days. Speaking of angry, Neva would be pretty ticked if I put a blue wig on her (or any color for that matter) Heh, heh….
Actually I was thinking that the blue wig would be perfect on her because she’s so white!!

Maybe double baking the granola is the trick to crunchiness? I haven’t made (or eaten) granola in so long, I forget if I had an issue with that.
I do not know how you manage to sleep like that. Every once in a while I will sleep until 8 am and then I spend the whole day feeling guilty and behind the eight-ball. I can’t even imagine starting my day at noon!
That flooding was terrible – as were the storms that moved through the midwest yesterday and the one last week in the Philippines. It’s nearly 70 degrees here today – I feel like the weather has just gone crazy.
I think I was okay with the late start because I had the day off before and knew I had Sunday to catch up. I wish I could give my gift of sleep to people!
We were lucky that we live in the far NW suburbs of Chicago, and it mostly hit down south. Just super windy and rainy – so sad!
I can’t wait for the quiche recipe!! I just had pickled jalapeños on my salad for lunch and I’m drooling for your quiche!
Actually pickled jalapenos would have worked just as well as fresh ones! I’ll have to use those next time.
Thanks for the shout out for the Shadwick’s plight. We spent a few hours there on Saturday helping them clean up. It’s quite strange to see a water line basically up to the doorknobs. I can’t imagine what it would be like to see that much water in my house or what it would take to recover from that.
When we had so much rain this past spring, I had 8 inches of standing water from front to back in our basement – one of the pumps went out over night – but luckily it was just rain water – some people I knew had sewage backup!
Biz, Thanks for posting the message about our friends flooding predicament, it’s pretty awful. We went over Saturday to help with the clean up. Love Lyle the squirrel, you’ve made a special friend, except he barks at you!!!

Something I miss from the “old days” is granola. I used to LOVE it. There was one that had dried raspberries and strawberries in it…so good! When I realized how many calories were in a serving of granola (which is a very small amount of food) I gave it up. 🙁
I hear you Lisa, but I figure its better than eating snickers bars and donuts! 😀
What a fantastic idea to add veggies to the stroganoff! I’m making some this week and I think I’ll add some frozen ones to my portion.
I saw that you were making ground beef stroganoff – great minds think alike! And Tony doesn’t do many veggies, so that’s why I have to kick my plate up a notch. Thank you for donating to that family! And not to think I am an asshole asking people to donate when I haven’t yet – my last paycheck was already spent on bills, so I plan on donating December 1. 😀
So I cook the granola 45 instead of 30 mins or do I need to do the two bake method? I have one granola recipe I make and it turns out crunchy and stays that way. I store it soup conatiners from chinese take out. I love that Kyle has trained you. You will have to keep it up at least for the winter she is depending on you. ( I see the extra weight your yummy goodies have provided). I have a photo of one of our cats in a wig. My daughter has always dressed them in various ways. Can’t wait to see the quiche recipe. i saw it on Instagram and told my husband that I was hoping you would post it.
I am thinking its the two bake method Kym. I am going to do an experiment this weekend. Baking it as one big piece, letting it cool, then doing the second bake and see if it stays crunchy – you’ll have to email me your recipe!

How are you storing your granola? If I make mine in the evening, it’s crispy, but if I don’t break it up and put it into a sealed plastic container until the next morning, it gets chewy…I suspect the humidity in the house has something to do with that.

That flooding in Austin was awful, and very unusual for that area. So many people were hit by it, very sad.
I actually cooked it at night, left it on the counter and by morning it was chewy. I just threw the whole sheet back in the oven for 15 minutes at 300, and let it cool again. This morning all crunchy, this afternoon still crunchy and tonight? Still crunchy! Um, can you tell I love crunchy granola??!! 😀
