Lunch today was a turkey pastrami in a light bun with baked ruffles and the rest of my tortilla soup from yesterday. The soup pics turned out horrible, but the sammie turned out good!
So for dinner I made chicken parmesan. No real recipe, but tonight I brushed on egg whites before dipping the chicken in seasoned panko bread crumbs and it worked really well.
Dinner comes in at 609 calories, 13 grams of fat and 65 carbs.

So how many of you are watching the final college basketball game tonight?? Tony and I are not huge basketball fans, but we don’t mind the fast paced college games every once in a while, and especially a game like tonight.
I am about to put together a spaghetti squash, spinach lasagna for my lunch tomorrow – I am going to use fat free cottage cheese instead of ricotta cheese – curious to see how the nutrition ends up on that too!
