Tortilla Soup

Now onto the Soup!
- 2 bone-in, skin on chickne breasts, skin removed and trim of excess fat
- 8 cups low sodium chicken broth
- 4 cloves of garlic, minced
- 1 big handful cilantro
- 1 small can shoe peg (white corn), drained
- 2 medium tomatoes
- 1/2 medium jalapeno
- 1 chipotle chile en adobo
Add chicken, garlic and cilantro to chicken broth and bring to a boil. Reduce heat, and cover about 20 minutes, or until chicken is cooked. Meanwhile, in a blender or food processor, blend together the tomatoes, jalapeno, 1/4 tsp. salt and chipotle chile and puree. Add to small skillet and cook down for about 10 minutes.
Remove chicken and let cool. Add pureed tomato mixture and corn to broth. Once cooled, pick off meat only and shred and at to the pot. Keep on low simmer until ready to serve. Garnish with lime, avocado or Mexican cheese!
Each 1.5 cup serving comes in at 250 calories, 7 grams of fat, 16 carbs, 4 grams of fiber and 21 grams of protein.
Avocado and Crab Meat Bisque (BSI Recipe!) (Check out the winner here!)
- 3 medium avocados
- 4 cups chicken broth
- 2 cups fat free half and half
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 tsp. garlic powder
- 6 oz. can crab meat
- salt and pepper taste
Peel avocados and mix well with crab meat. Melt the butter and add flour and cook for 1 minute. Add chicken broth and garlic powder and simmer for 20 minutes. Remove from heat. Add fat free half and half and season with salt and pepper to taste.
1 cup serving: 215 calires, 13.8 fat, 10 carbs, 1.8 fiber and 7.8 protein
