First of all when I left my house this morning it was 53 degrees!!!! Too bad I can’t work outside today!
So I tried, I really really tried not to have an egg sammie this morning. I’ve been reading about everyones cottage cheese pancakes and made the batter last night. I had the bright idea to add some baking powder, as this is what makes my regular pancakes so fluffy, so that may have been my fatal error.
So if any of you have a tried and true oatmeal cottage cheese recipe, please send it my way!
So of course I had to go to Plan B! 2.2 ounce sesame roll, 1/2 cup egg beaters, baby spinach, .6 ounces muenster = yum!
With my last Fage and 2 ounces chopped apple:
Breakfast comes in at: 439 calories, 10 fat and 51 carbs.
So today at lunch I am going to Fresh Market – I love this stores seafood department. I think their produce is ridiculously overpriced, but I don’t like to skimp on the quality of the seafood. Tonight’s dinner should be interesting – another nod to Diners, Drive-Ins and Dives: Tempura Ahi Tuna with Avocado Wasabi Sauce! I’ll see what else will go with dinner when I am at lunch.

I cut it down so that I eat an entire batch by myself: 1/3 cup oats, 1/3 cup cottage cheese, 1 banana, 1/4 cup egg whites, a couple pinches of baking powder and a few drops of vanilla extract. Blend so its super smooth and creamy and well- mixed. Plop by the tablespoon onto the griddle, then put some frozen blueberries on the top of each one and flip after a couple minutes. I don’t put syrup or anything on them; the blueberries add nice flavor!

I used to make this pancake (one huge one or a few small ones):
1/2 cup oats
1/4 cup cottage cheese
1/4 cup egg whites
cinnamon, stevia, vanilla extract, cinnamon
Blend it all in a mini food processor for the batter!
Oh Diners Drive-ins and Dives always inspires me – but usually not in a good way. All that greasy, triple-fried, breaded and huge serving goodness makes me feel like I need to eat with the power of 12 men.
I know, right?! I am hoping that having my oil at the right temp, it won’t be too bad tonight – and tempura is a very light batter.
Biz, I wanted to let you know that I microwaved my eggbeaters in a little bowl and they came out perfectly – so fluffy! My homemade egg McMuffin was wonderful…thanks for your advice!

The cottage cheese pancakes are really hard to make. Do not expect regular fluffy pancakes, they’re more chewy and dense but very yummy. i used Kath’s recipe and would suggest mixing the batch up in the food processor first, letting it sit for 5 minutes to rest then adding a little flour. Good Luck on next time!
