Today was my first trip to the grocery store with my $20.  As soon as I told Tony that our mystery potatoes were going to be potato pancakes he asked if we had any applesauce.  We didn’t, and I miss my baby spinach and we needed eggs.

I spent $6.28 cents leaving me with 13.72 for the next two days!

I’d like to say that I marinated our pork loin, but in organzing our deep freeze, I found this.  Totally forgot I bought it!

I don’t really have a real recipe for potato pancakes – I kind of eye ball it.  I used egg beaters instead of eggs and about 4 tablespoons of panko bread crumbs.

Using my shredding blade on my food processor really makes this quick work!

While making them in batches, I kept the cooked ones in the oven at 250 to stay warm and crispy – with a last minute under the broiler.

The top was apple smoked bacon, but I really didn't taste much of it!

My plate: 4 ounces pork, 4 ounces potato pancakes, 1/2 cup applesauce (put on at the table!) and 1.5 cups baby spinach with 1 tablespoon Annie's Asian dressing (which is so good!)

So while Tony is watching Ultimate Fighting or Boxing (can’t tell!) I am going to start making Matt’s focaccia bread.   His bread looks a lot like Tony’s Italian schichata bread – we are both anticipating the overnight rise in the refrigerator!

I hope I don’t oversleep tomorrow because I really had a jones for french toast this morning!  See you tomorrow!
