Okay, I have redeemed myself from last nights dinner! Tony loved it! This was so simple to put together too. Now, I made my marinara sauce from fresh tomatoes, but I am sure you could use bottled spaghetti sauce.
Cottage Cheese Spinach/Beef Lasagna
- 1 cup marinara sauce
- 2 cups 4% cottage cheese
- 1/4 egg beaters
- Italian seasoning, salt/pepper to taste
- 2 ounces Mozzarella cheese
- baby spinach/cooked ground beef (your choice!)
- 3 sheets whole wheat lasagna noodles (not cooked)
Mix together the cottage cheese, egg beaters and seasonings. Set aside. So while I had a cup of baby spinach on my half, Tony had 3 ounces of seasoned ground beef on his half. The lasagna noodles I have fit perfectly in a bread pan, so that’s what I used. I thought I’d put parchment paper on the bottom so it would be easy to remove and cut. Worked perfectly!
Start with a layer of sauce, 1 lasagna noodle, cheese mixture, 1/2 spinach, 1/2 meat, another lasagna noodle and repeat layers until you finish with sauce and mozzarella cheese. I put 1 ounce of cheese on each of our sides. The reason I used cottage cheese is because Tony doesn’t like ricotta cheese! I know! Who knew Italians couldn’t like ricotta cheese!
Stats for the day: 30 minutes of exercise, 10 minutes of stretching – yeah!

I can’t believe tomorrow is Thursday again already! This week is going by fast. Off to relax with Tony, maybe fast forward through last nights American Idol – I really want to see the blind guy sing -I thought he did really good in Hollywood week! See you tomorrow!
I have used cottage cheese in a pasta bake before, too. It’s amazing how good it turns out!

Ha! Sorry – egg beaters are fake eggs. They say they are made from eggs, but each quarter cup is only 30 calories!

Delicious! I don’t really like cottage cheese on its own but I LOVE it when its cooked in other things. And spinach is so good.

My mom always makes lasagna with cottage cheese, probably because that’s how her mother made it. I would assume also because it’s more affordable and readily available.
