I got up a bit earlier today to make my food for the day. After looking around, I decided I wanted a frittata. The base is one cup shredded hash browns (140 calories per cup). I started out by Pam frying the hash browns by themselves, and then they were crispy on the bottom, added 1/2 cup egg beaters, 1/2 cup egg whites, diced red pepper and spinach – then threw it in the oven at 350 for 20 minutes while I finished getting ready for work.
Morning break is over – see you at lunch for a healthier grilled Reuben Sandwich! (I found my sauerkraut!!)
