So after watching the Office last night and a recorded Man v. Food (he tried to eat a dozen egg omelet and with 2 bites left and 1/2 hour to eat those last two bites, he couldn’t do it!) I put together my breakfast.Ā  Let’s just call it a kitchen sink frittata because I basically used up what I had in the fridge.

  • chopped up hashbrown patty
  • 3 ounces chopped shrimp
  • 2.5 ounce chopped zucchini
  • 2 ounce chopped red pepper
  • 2 ounces chopped cooked broccoli
  • 1 egg
  • 3 egg whites
  • 2 tablespoons fat free half and half
  • 1/2 ounce shredded mozzarella

I kind of went overboard on the crushed red pepper – this was spicy!
