Ultimate Beef Chili

If I have any faithful readers, you’ll know that there are two dishes that I routinely try to make, without much success.   One is Chili and the other are scalloped potatoes.  But that doesn’t stop me from having BOTH dishes on my menu this week! So I’ve adapted another Chili recipe from www.eatingwell.com. Ultimate Beef Chili 1 pound beef round, trim all the fat off...

My Spicy Zero Point Mexican Soup

When my sister and I first lost our weight (I lost 70 pounds – and kept that off for 7 years . . .um, 35 pounds may have crept back??!!) – Weight Watchers Zero Point Soup was a staple.  A year ago they came out with a zero point Mexican soup and a zero point Italian soup.  I decided to make a zero point Mexican soup...

Chocolate Banana Oat Peanut Butter Chip Pancakes

Roni at www.greenlitebites.com was the inspiration for this mornings breakfast.  I almost always like savory breakfasts, but felt like something sweet this morning.  I altered my recipe from hers by reducing the amount of cocoa, and adding 1/2 cup of oats (since I didn’t have whole wheat flour) and also added a tablespoon of peanut butter chips!  And I didn’t have blueberries for her sauce...

Oven-Fried Chicken

I adapted a recipe from eatingwell.com – their take on oven-fried chicken.  The only variations is that I used drumettes and whole chicken wings (oh, and maybe I left the skin on!) EatingWell’s Oven-Fried Chicken 1/2 cup buttermilk (I didn’t have buttermilk, so I used 1/2 cup skim milk to 1 teaspoon of vinegar) 1 tablespoon Dijon mustard 1 teaspoon Tabasco (could have used more...

$100 dollar grocery challenge and what $100 makes

Okay, so I came REALLY close to my $100 challenge!   A couple things accidentally fell in my cart – this being one of them! I also bought two pommegranites for $3 – turns out Hannah loves pom seeds!  And she bought some chocolate chips to make cookies for a couple of her teachers.  That being said . . .  drum roll please. . . Here’s...

Veggies!

I can’t really remember the last time I even made a salad – too long!   My salad consisted of, 2 ounces romaine, 2 ounces diced red cabbage, 2 ounces diced cucumber, 1 tablespoon red peppers, 1 teaspoon parmesan cheese and 2 tablespoons balsamic vinagrette dressing.  Oh, and I heated up 4 ounces of sausage pizza to go with – I needed the extra dairy from...

Goal pants and yummy breakfast. . .

MizFit (www.mizfitonline.com) always talks about a vision board – putting your ideas/goals in a tangible format to help you on the path to whatever your personal goals are.   I plan on making one for myself soon, but until then, there’s my goal pants.  They are these black capri pants with palm trees on them, I am sure many of you may think they are gaudy,...

Pizza Party Friday!

But before I get to that, I took Ed on a walk this afternoon.  I feel bad that when its cold outside, I rarely take him for a walk when its cold! Here’s how he looks like in action:  So we walked to the river – the channel is almost all frozen! So it was kind of chilly when I got back, so I decided to...

Cleaning out the fridge. . .

It’s been WAY too long since I cleaned out my fridge – maybe three weeks?   Now its all nice and pretty and up to Hannah’s standards.  While I cleaned the fridge, she reorganized my pantry – yeah! So when I went to go grocery shopping at my favorite store yesterday, they were closed on New Years Day!  So I only got stuff I needed for...

My Favorite Snowman of All!

As I was packing away my lovely snowmen, I forgot that I wanted to share with you my favorite snowman! Let’s back up to 2001.  This is the first Christmas of our newly formed family:  me, Tony and his son Joe and my daughter Hannah.  We used to pass by this tree farm and decided that this year we would chop down our own tree...
