I was going to make Chicken Parmesan tonight since I didn’t make it last night, but decided to shake things up and I made chicken tostadas. We hadn’t had Mexican in a while so it hit the spot. I tried a new tostada – Old El Paso brand. I was a bit worried buying them in a box for fear that they would all be broken, but they were fine. And three tostadas are only 150 calories – just bake at 325 for 6 minutes.
Hannah and I really liked them – they were really thin and crispy!
My three consisted of:
- 3 tostada shells
- 3 ounces grilled chicken
- 3 tablespoons of fat free refried beans
- 1 tablespoon canned corn
- 1 tablespoon black beans
- 1 ounce Mexican cheese
- pickled jalapenos
- sliced radicchio
- 3 teaspoons light sour cream
Of course, I doused everything with Tabasco! What do you think of the new header? I took that pic at the grocery store today.

I heat up tostadas in the toaster. If you put them in your toaster on medium, they come out all crispy and warm and you don’t have to heat up your oven.

It’s very mild, even milder than tilapia.
It’s a fish from Vietnam and is in the catfish family. Had I known this before I bought it, I wouldn’t have even tried it. So ignorance was bliss in this case because I love it.
