I worked out today! Probably the first time in a week at least. I am so happy when I am done working out I don’t know what prevents me from going every day? I ended up doing 35 minutes on elliptical, hill climb up to level 18! And I checked, it goes WAY higher than that. Then I did 5 minutes of various ab work. YIPPEE!
I checked my blood sugar before working out and it was 139 – perfect! But I must have really been moving because by the time I got back I could feel my hands start to shake – it was 65! Luckily this stir fry is finished in about 5 minutes tops!
Lunch is broccoli slaw stir fry with tofu. This package of broccoli slaw that I got had shredded red cabbage tossed in, which I love! I used up the last of my peapods, 2 cups broccoli slaw, 1/5 block of firm tofu, and 1/2 package of ramen noodles, cooked without the seasoning.
What I end up doing is pouring boiling water over the noodles and put a paper plate on top to “cook” while my stir fry is going. By the time my veggies are cooked, I just drain the water, and toss it in. Yum! And I picked up another bottle of Wonnie’s Korean Style BBQ sauce – its sinfully delicious and only 15 calories a tablespoon. Sweet! (and VERY spicy!)
And I decided to have berries and cream for dessert! Two tablespoons of whip cream is only 20 calories and 1 carb. Perfect way to cool of my spicy mouth after the stirfry!
It’s Friday, which means Pizza! I may pick up a steak for Tony if he isn’t in the mood! Hannah and I could have it every day given the chance! Hope everyone is having a good Friday – see you tonight!

Whipped cream after eating something spicy is amazing! I never thought to use cabbage slaw in stir fry but I love that idea!

I adore whipped cream. I can’t stick to one serving though. A can is gone in under 3 days. And Bobby doesn’t even have any to help me!!
