I went to Fresh Market and Trader Joe’s this week for groceriies.  Between the two stores I spent $84!  That’s huge considering how expensive everything is at The Fresh Market.  I ended up getting my tilapia, shrimp, and as a treat 10 stuffed escargot shells for Tony.  They have the escargot and herb butter mixture all in each shell and I end up baking them in my mini muffin tin.  He loves them!

When I got home, as I was putting away my groceries I remembered I never tried the kale I bought last week, so I ended up trying kale chips.  I had about 2 cups of chopped kale, drizzled about 1/2 teaspoon olive oil and mixed that around.  The sprinkled parmesan cheese and grey sea salt and cooked them for about 15 minutes in a 375 oven.  The result?  Not much flavor at all.  First I expected bitterness, maybe I overcooked them because they were very fragile.  I tried dipping them in jalapeno mustard but it wasn’t coming together.  I probably ate about half of what I made.

My sammie, however, was delicious!

  • 1 ounce corned beef
  • 1/2 ounce swiss cheese
  • 1 slice Trader Joe’s 10 grain bread
  • .5 ounce sauerkraut
  • 1 teaspoon thousand island dressing
This whole lunch was only 310 calories, 15 fat (mostly from the olive oil) and 27 carbs

Then by the Fresh Market is a DSW, and they have a huge clearance room.  I was able to get a new pair of gym shoes for only $25 with tax!  They are Saucony brand.

  • grilled tilapia tacos with refried beans and Mexican rice
  • white chicken chili over baked potatos
  • shrimp scampi over thin spaghetti with garden salad
  • tofu stir fry for me and Hannah and beef and broccoli stir fry for Tony
