I woke up this morning craving pumpkin pancakes, and I don’t even know if I’ve ever made them before.  I asked Tony if he would like some:  “No!”  I asked Hannah if she would eat some: “Yes!”  So it was two against one!  I should preface to say Tony rarely eats breakfast!

But before I get to the recipe and pics, Tony WON again in Monopoly last night.  And I had the orange properties, had houses and then hotels on them only to have NO ONE land on me!  Tony meanwhile got the yellows, greens and of course Boardwalk and Parkplace.  I kind of play Monopoly like the way I shop – at thrift stores.  I’d much rather pay $60 for Baltic Avenue instead of forking up the $400 for Boardwalk!

Hannah on the other hand LOVES getting all the railroads and both utilties.  This strategy works well in the beginning when no one has any houses or hotels, but then obviously she can only get $200 for every land on her railroads and 10x the roll of the dice for the utilities.

It was a good effort on mine and Hannah’s part though!  Here is how the game ended up looking:

There really is no sleeping in because Ed still wants his walks.  I’ll be glad on Monday when I can take him back to the trails.  It’s overcast and cold.  We turned our heat on for the first time last night because we are out of wood for our wood burning stove.  A delivery is supposed to come today between 11:00 and 3:00.

Okay, on to the PANCAKES!!!!!!

Light and Fluffy Pumpkin Pancakes

  • 1 1/4 cups flour
  • 1 tablespoon Splenda brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 pinch clove
  • 1 cup skim milk
  • 6 tablespoons pumpkin puree
  • 2 tablespoons light margarine, melted
  1. Whisk flour, sugar, baking powder, spices and salt in a bowl.
  2. In a separate bowl, whisk together milk, pumpkin, and melted margarine.
  3. Fold mixture into dry ingredients.
  4. Spray or grease a skillet and heat over medium heat; use 1/4 cup measuring cup for each pancake.
  5. Cook pancakes about 3 minutes per side. 
  6. This made 8 pancakes.

Not too busy of a day today.  The usual laundry, vacuuming etc.  My workout will be stacking the wood and I think I am going to take Ed to a trail that’s open this afternoon if the weather isn’t too bad.  I think they said snow flurries today?

And we have crab fest at our neighbors house tonight!  Twice a year we alternate and buy about 6 to 8 pounds of king crab legs and tonight is the night!  It’s a lot of fun, sadly, Hannah has hot dogs with their little kids, she doesn’t like crab legs!  Then we play cards, its a lot of fun.
