I didn’t get out of bed until 10:00 today – nice!  It’s crappy out, supposed to rain all weekend, so its hard to get motivated!

I tried for the second time to make hollandaise sauce, this was maybe  bit more successful?  I definitely poached the eggs perfectly.  On www.pioneerwomancooks.com she has a recipe for Eggs Benedict.  The secret to the perfect poached egg is to swirl the boiling water then drop the egg in.  It kind of wraps itself around so the egg whites don’t separate.  Still need to work on the sauce though.

I made myself a fritatta:

  • 1 cup egg whites
  • 1 ounce spinach
  • 1 ounce red and green pepper chopped
  • 1/2 ounce sharp cheddar cheese
  • 1/2 cup shredded cooked potato

Before going in the oven:

Bake at 350 for 20 minutes, or until browned.
