It’s 21 degrees people.  It’s April 3.  I am so over winter, but hopefully after today this arctic air will move on out – I think our high tomorrow is 57 – bring it!

My boss was back from spring break.  One of her favorite breakfasts that I made are my Chobani banana granola pancakes.   I paired my two pancakes with a pork and apple sausage.

Because so many people were out of the office during my birthday, we celebrated yesterday.  Treats were brought in – thanks for the spread J!

I had three small pieces of cheese, a Cutie, and some pineapple.

At lunch I decided to bike ride – I ended up doing 8.08 miles in 35 minutes!  I did the moderate hill climb, and kept my RPM’s between 90 and 100 the whole time.

For lunch I made me and my boss flank steak tacos, cilantro brown rice and chips and salsa.  I used low carb wraps, 2 ounces of leftover flank steak, 2 tablespoons of refried beans, 1/2 an ounce of cheddar cheese and baby spinach.  Those chips?  Tostitos whole grain – very crispy, not too salty either.

I don’t care what the weather is, I’ve already switched my brain to grill mode.  I bought a turkey breast over the weekend, with the thought of having it for dinner one night this week and then making a turkey noodle soup with the leftovers for lunch next week.

Only one teeny, tiny problem with that idea.  We lit the grill around 6:00 and I told Tony I thought it would only take about 45 minutes to cook.  Um, try an hour and 20 minutes!  And yesterday of all days, Tony actually ate lunch at lunch time (sometimes he doesn’t eat anything until 3 in the afternoon!).  So by 7:20 he was hangry!

No real recipe – I just put about a teaspoon of olive oil over the skin.  Then sprinkled with Italian seasoning, salt and pepper. And I slice lemons and put them under the skin.  This cooked on indirect heat too – I had the two right burners on, and the turkey sat on top of the cold side.  It kept a steady temperature of about 375.

It was interesting yesterday what people thought about the sugar free honey.  All I know is that it is completely artificial.  That honey comes in at 50 calories a tablespoon and 17 grams of carbs.  Regular honey?  60 calories and 17 grams of carbs.  For diabetics, it’s all about the carbs, so I don’t know who the company can say it’s diabetic friendly – 100% of carbs turn into glucose so I would think the sugar free and the regular honey would effect your body the same way.

I’ll have to ask my registered dieticians to chime in on this one – Nicole, Kristen and EA.   Your thoughts ladies??

You are probably wondering by now what the title of my post is all about today.  Well reason #1 that I am so lucky?  Tony loves my body.  When I met him I was a size 8 and 135 pounds.  He knew I was heavy before from pictures I had in my house when we met, but I had lost 70 pounds right before meeting him.

Since being put on insulin, suddenly all the things I stayed away from were all available to me again – I’ll just take more insulin!  “I can get cheddar bacon fries for just .99 more?  Yes please!”

But even as I started to gain some of the weight back, he’s always told me I am beautiful and that he is lucky to have me in his life.  Not a day goes by that he doesn’t tell me this.

But ladies, you know how we are – we pick apart our bodies at any given chance.  Getting out of the shower all I see is a big belly.  When I run on the treadmill, I feel my muffin top bouncing up and down. 

But my ass?  I love it!  It’s perky, a nice shape.  So today I decided to think positive about my body and today I embrace my ass!  Open-mouthed smile

So I haven’t weighed myself in a while.  A long while.  Truth be told I would have thought I’d gained 5 pounds with all the birthday celebrations we had in March.  But guess what?

So I’ve lost 3 pounds in the last 50 days.  Not going to win any records, but it’s put the month of March in perspective for me – and I maintained my weight, which is a good thing!  I am going to do my WI Wednesday again to keep on track.

Off to make broccoli ham macaroni and cheese for lunch – I am going to be using unsweetened almond milk – if it turns out, I’ll post the recipe tomorrow.
